About this Cook
I've always worked and never had time to enjoy cooking. I would come home from work and make dinner without any enjoyment. Cooking was a chore, but now that i've been off of work, it's become a pleasure. I have more time on my hands to try more recipes, and most of all, time to put forth more love and creativity into my meals. When I return to work, I will plan ahead and continue to enjoy cooking.
My favorite things to cook
I enjoy baking and cooking, trying different recipes. I really like making scones and experimenting with different kinds. Sometimes I will take a regular dessert recipe and use a diet sugar to make it into a sugar free treat for my diabetic family and friends.
My favorite family cooking traditions
My family always gets together on Christmas Eve and we all bring wonderful dishes to share. There are many great cooks in the family.
My cooking triumphs
Mexican rice is the one thing that I make top notch. When I was a tween or teen, my sister taught me to make good rice, and it always comes out perfect:-)
My cooking tragedies
Once I tried to make an angel food cake using a recommended springform pan, but the batter kept leaking out of the bottom. It was a disaster lol.

Easy Platz (Coffee Cake)
It's not very sweet, but thats the way we like it. I made this yesterday for our bible study that evening. The entire cake was gone in minutes. I used Splenda instead of regular sugar (because people that I bake for, are diabetic). I baked it in an 8 x 11.5 glassware for 30 minutes. Next time I think I will add another 5 minutes for baking.

Brazilian White Rice
I love this rice. The onion and garlic give a wonderful light flavor. The color turned out a bit off-white, probably because it was sauted brown, but who cares. This is fantastic rice and it went really good with the chicken stir fry that I threw together. I will surely make this again and again:-)
