Spaghetti Squash I

This was very tasty and so healthy. I added pinto beans for protein. Used dried basil. Didn't have onion, but did add red pepper. Used kalamata olives instead of black. I ate my seconds without feta and it was still yummy. good healthy recipe.

Hot Tortellini Salad

I am so happy i found this recipe...so easy and quite yummy. I followed the recipe somewhat- sauteed my broccoli with the garlic and herbs (before I knew I was doing this recipe i was sauteing with olive oil and lemon juice) and didn't have ham and its still very yummy. Simple good...wouldn't make for guests but good for a week night

Followed the recipe exactly except I couldn't find a can of just asparagus tips but that didn't seem to matter because the recipe was still a hit at my party.

Homesteader Cornbread

I used graham crackers for dippers. I took it to a party and it was enjoyed. I didn't make any changes other than i was short on time so I popped it in the freezer for a bit.

Garlic Chicken with Orzo Noodles

This was good and I will probably make it again. I didn't give this 5 stars because it doesn't knock your socks off, but its a good and easy side dish. When I make it again I will probably use wine as someone suggested to deglaze the chicken and may add more parmesan to the dish rather than just a topping to add some more flavor. I did cheat and use canned chicken which may have affected the dish's outcome, but like I said-it was easy and good. Overall a light dish that seemed healthy.

Quinoa with Peas and Parmesan

This was very yummy. My husband enjoyed it too. Only changes I made were based on others' reviews so I used more tomatoes, wine, peas and paremesan. Used chicken broth instead of vegetable. Used olive oil instead of coconut. I also liked the fact that we were eating something that was pretty good for us too. I will def make this again.

Best Ever Party Appetizer

Very yummy- expensive treat though. Only changes I made- used kalamata olives instead and put the entire mix in a plastic bag to mold it more into a log and slice off of.

BLT Pasta Salad

Very yummy recipe. I now get requests for it...made a couple adjustments though...use mayonnaise and ranch dressing and add more than recipe calls for since it gets absorbed by the pasta. Also- use farfelle pasta and also add peas.
