Picadillo - Our Way

Reviewed: Jan. 29, 2013
This is my favorite variation, but that is likely because I ate it all the time when I was a kid. Thanks Mom!

Peanut Butter Oatmeal Cookies

Reviewed: Jun. 8, 2010
I didn't have applesauce or dry milk powder, so I subbed in about 1/6 cup skim milk and used a few tablespoons of strawberry preserves instead. They turned out delicious! I made them yesterday, and they are still soft, chewy, and delicious this evening!

Home-Fried Potatoes

Reviewed: Feb. 27, 2010
Good, simple recipe! I'm not that familiar with cooking potatoes and really wanted to check to see times and whether or not to boil first, and this answered all my questions. I skipped the paprika, used dried parsley, and added rosemary and garlic powder. Yummy, easy way to start your Saturday!

Best Ever Muffins

Reviewed: Jul. 16, 2009
Wonderful base recipe! I'm in the process of moving and had some leftover baking supplies around so I threw the following substitutions in: 1/4 cup honey, 1/4 cup white sugar, and 1/4 cup brown sugar. 1 1/2 cups white flour and 1/2 cup whole wheat flour. 1/2 cup chocolate chips, 1/2 cup dried cherries, substituted 4oz applesauce for the oil (they are a mite bit dry, so next time maybe oil will work better), and added a mashed banana in. YUM.

Couscous, Cranberry, and Feta Salad

Reviewed: Jun. 30, 2009
Extremely easy, healthy dish. I've made it a few times in the last few weeks and eaten it cold for days after making. It's simple and good. Not AWESOME, but definitely worth a try.

Curried Squash, Garbanzo Bean, and Potato Stew

Reviewed: Jun. 22, 2009
Thoroughly enjoyable, and extremely easy. I ate it over whole wheat couscous with a few raisins sprinkled on top. I'm curious to see what some coriander and cumin might do to the recipe for next time--it really is JUST curry. But it's a great start!

Morning Glory Muffins I

Reviewed: Jun. 2, 2009
I like these a lot. They're very tasty. I modified a few things: used half white and half whole-wheat flour; used half white and half brown sugar, and used slightly more of the apple and carrot than the recipe called for. Really good!

Whole Wheat Blueberry Pancakes

Reviewed: May 22, 2009
Very good. Apparently I'm not cut out for pancakes, but these are easy and tasty, even if I burn them a bit. I think next time around I'll add a bit more milk to make them fluffier.

Coconut Curry Tofu

Reviewed: May 22, 2009
Fantastic! The flavors were as good as anything you find in a restaurant. I bought pre-cubed Extra Firm Nasoya tofu, drained it in the fridge overnight in paper towels and a strainer over a bowl. This made the tofu firmer and gave it a nice texture. I also substituted spinach for bok choy and it was fabulous. Will definitely make again!

Good texture and sauce. I added a green pepper, and am saving to eat over the next few days. Yum!

Great start. I plan on experimenting in the future with kalamata olives and roasted peppers. Mmm!
