Ultimate Twice Baked Potatoes

These were truly awsome! Really, really good! Followed the recipe for the most part but mixed the bacon bits in with the potato cream. I didn't really measure but tasted as I went as others had suggested. Hubby had 3! Thanks for a great recipe!

Cabbage Fat-Burning Soup

Love this soup! I haven't frozen any of it yet but am planning on it. I made a couple of changes, I did not use the onion mix because I didn't have it, I added fresh about 6 garlic cloves, cumin, turmeric (awesome health benefits but only used a litte as it is a strong spice) and some hot sauce. I like a spicy soup. I did omit the carrots just because I didn't have those either and am not a huge fan. I did add lemon juice, again for the health benefits. Will definitely make again and again - thanks!

Speedy Huevos Rancheros

Really good. I used Ro-tel as others had but only had a 10 oz. can for two people - seemed perfect thought. Also added a little extra bacon didn't drain, added onion to bacon then Ro-tel, let it simmer down a little bit before adding eggs. Lots of kick, easy and tasty!

I make this now all the time - my husband and step son love it just as a treat. I did double the almonds and I use the simply egg whites which say they are safe to eat raw. We have drizzled chocolate, butterscotch, even marshmallow on top and it's really, really good!

Brunch Strata

My stepson absolutely loves this breakfast - he even likes it cold and he is a particular eater! We make this a lot, I leave the bread cubes out as I don't want the carbs. I have used bacon instead of ham but prefer the ham. I also frequently switch out the vegetables depending on what is in the fridge. Peppers, tomatoes, mushrooms, onion, broccoli, etc. Awesome, thanks!

Wedge Salad with Elegant Blue Cheese Dressing

Love this - I eat it every week for lunch sometimes for dinner too! I use the blue cheese gorgonzola dressing - yum! But I add a little water to the dressing to try to save some calories.

Slow Cooker Chicken and Dumplings

Family and friends loved this - it is great for a snowy, cold day in Chicago. Great comfort food! I added more chicken stock but also added mushrooms, carrots and celery to get the veggies in. I end up with something more like a pot pie but it is really good!

Chili Rubbed Pork Tenderloin With Apricot Ginger Glaze

My husband absolutely loved this! I made a couple of changes, I left out the sugar for the rub as others had suggested. And I used sugar free red raspberry preserves since I had it in the cupboard. I used an electronic thermometer and pulled it out when it reached 160. I also added cayenne as I really like a kick! It was so tender, hubby used leftovers for a sandwich the next day with swiss cheese. Awesome and I am not a glaze person!

Absolute Best Liver and Onions

I don't eat liver, don't care for it but my husband loves it. I made this recipe for his (without my own tasting) and he LOVED it! I added garlic salt, paprika and pepper to the flour, didn't turn them but once and also did the bacon with the onions. I did the milk soak for about 40 minutes, used beef calves livers. I will definitely make this again or at least teach him how to make it!

Authentic Louisiana Red Beans and Rice

I couldn't find my New Orleans recipe book so I used this one and it was an awesome substitute. My grocer didn't have andouille so I used Johnsonville's hot italian sausage which made a fine substitute. Also, I cut pieces of cooked sausage up into small pieces and added it to the beans. Will definitely use again!

Seared Scallops with Pineapple, Ginger and Lemon Grass Salsa

Awesome recipe! I followed as stated but altered only two things, I didn't have lemongrass so I used freshly grated lemon peel, I also used garlic salt on my scallops and in the salsa which I really liked. I also didn't have safflower oil so I used canola. My husband loved it! Thanks!
