Lattice Chicken Potpie

I would have given it 5 stars, but I changed the veggies for fresh carrots and potatoes (I sauteed them first) and added frozen peas to the mix. This was a great meal for the week after Thanksgiving, I already had all of the ingredients left over from the holiday!

Lentil Soup

Good soup. I used beef broth instead of water to add more flavor. Didn't have spinach but I did add some red pepper flakes which worked nicely.

Mulligatawny Soup I

Very Good!!! I doubled the recipe, and used brown rice (the only kind we had) and added it right after the stock. I was worried it wouldn't be thick, but once the rice cooked, it thickened up. I left out the heavy cream, but if I had coconut milk on hand, I definately would have added that!

Zucchini Beef Soup

It was a good base, but I found I had to add alot more seasoning. I added fresh basil, fresh parsley and some herbes de Provence, which helped. I left out the sugar. The parmesean is a must!

Meatball Alphabet Soup

Yum! I was looking for a filling yet low fat soup and this one is perfect! I used what vegetables I had on hand and Rotini pasta. The soup would have been just as good without the pasta. I didn't use the tomatoe paste and I used a large can of crushed tomatoes instead of diced tomatoes. I think this is a recipe that you can change in many ways, but it always turns out great! Thanks!

Old Fashioned Coconut Cream Pie

This tasted very good, however the texture was more like a pudding pie. I was looking for that thick, cheesecake like texture. (I used coconut milk with the heavy cream, maybe that effected the outcome.)

Absolutely the Best Chocolate Chip Cookies

Awsome cookies! These came out perfect. I used butter instead of shotening and dark chocolate chips instead of milk chocolate. This is the cookie recipe I have been looking for!
