Sweet Potato Rolls
I made these for this year's Easter dinner. Absolutely delicious! They aren't hard to make either.

Salsa Chicken
This was awesome! We all enjoyed it, even my young children. I accidentally misread the recipe and coated the chicken pieces in the taco seasoning, rather than sprinkling it with the seasoning. I thought it was going to be too spicy, but by using extra cheese than asked for and topping the finished chicken with sour cream (yummy!), it wasn't too spicy at all. This is a definite repeat.

Broccoli, Rice, Cheese, and Chicken Casserole
I made some changes: a little less processed cheese than called for, used brown rice instead of instant, didn't add butter, used onion soup mix instead of chopped onion, and added browned buttered bread crumbs on top for last 5 min. My husband enjoyed it, but I didn't. This is a recipe worth playing with until I get it right. I'll try some other suggestions others have shared. The buttered bread crumbs on top was a good addition though.
