No-Cream Pasta Primavera
This was awesome. The veggies I had on hand were: Zucchini, carrots, eggplant, and a bell pepper. I roasted them foe 25 min. And then added them to the onion and garlic sauté. I also added mushrooms with the garlic and onions and then put in a can of drained petite garlic and olive oil tomatoes. Then seasoned with salt and garlic powder. So yummy!
