Cream of Fresh Asparagus Soup II

Made this recipe and it was delicious! Perfect texture and balance. The only change I made was adusting the servings to 12 and I used an emersion blender to only slightly puree the onions and asparagus only b/c it's our preference - we like the more chunky consistantcy to our soups. Thank you for the recipe - I'll be making it again!

Chef John's Pumpkin Pancakes

These pancakes were delicious!! I used 1 1/2 tsp. of pumpkin pie spice in place of the ones shown and skipped the lemon zest as well. They cook up very moist which we loved! These don't even need syrup - a little butter and they are perfect!!

Apricot Glazed Pork Roast

Amazing!!! I only did a four serving amount of this...a 2lb pork loin roast, 1/2 jar sugar free apricot preserves and 8 oz of chicken stock. I salt and peppered the pork also added some onion powder instead of onions (my husband hates them!) and added a tsp of dried thyme. I drizzled honey over the pork and cooked in the crock pot. It was savory and simply delicious!!! Thank you for the recipe!!

Strawberry Lemon Muffins

Makes a great bread!! ...I took another viewer's idea of using 1 1/4 cup flour and a 1/2 cup rolled oats in place of the wheat flour. I didn't feel like making muffins so I greased and floured a loaf pan and cooked it at 375 for 55 minutes. Night and moist and VERY yummy!!

Oven-Fried Catfish

This recipe was delicious!! The best "oven fried" recipe I've tried so far. My husband raved about it the entire time he ate the fish. Spices were blended perfectly - loved the celery seed. Thank you for the terrific recipe!!

Ricotta and Spinach Stuffed Chicken Breasts

This recipe was delicious!! Wouldn't change a thing with it. I made it per the recipe and had enough stuffing to make six good size chicken breasts. My boyfriend, who is generally afraid of these types of dishes, is still raving about it!! Thank you for the recipe!

Pineapple Pork Chops

This recipe was delicious!! Even my boyfriend loved it and he's a fussy eater. I took the tip of adding the chunks of pineapple, but we both agreed we didn't care for it so I will omit it next time. We had leftover the next day and the sauce was even more flavorful. Thank you for the great recipe!
