Chef John's Lemon Bars
I made these lemon bars to rave reviews for my family, so I decided to take them to a school potluck after doubling the recipe and using a 9 x 13" pan. I followed the recipe exactly, but took another reviewers suggestion about pulsing the crust ingredients (butter cold) in a food processor. To press it into the pan, I dumped it in and smoothed it out, then laid a piece of plastic wrap over it and pressed it down first with my hand, then with a heavy can. I did not prick it. The baking times were just spot on, even doubled works with the original times. Everyone at the potluck raved about them, and sought me out to tell me so. I went home with an empty pan. Fantastic bars!

Cranberry Pistachio Biscotti
Very tasty, and not difficult to make! I substituted toasted blanched almonds that I chopped up for the pistachios, as I couldn't find shelled pistachios and didn't want to mangle my fingers shelling them. I might try dipping one end of the cookies in white chocolate next time.

Pecan Sandies
Makes a lot! Our family enjoyed these - nice and light, very sandy texture (but does make a lot of crumbs while eating, and delicate to store). The flavor was very nice. Next time I'll definitely half the recipe.
