Chicken and Garlic

I had skinless boneless thighs on hand, which I cut into strips, not exactly bite-size. Browned in 2 batches, then decided to add 2 med chopped onions. Then at least double the garlic (more the better!) plus the zest from 1 lime and 1 lemon, which I used for the juice (why just use 2 T? makes more sauce). Great easy dinner. I served with a rice/lentil mix, but white rice would be good too.

Sherry Sour Cream Chicken

This came out good - although I too made some changes. I added a Goya seasoning packet, and since I didnt have fresh herbs, I only used dried. I left out the additional butter, only used the sherry to deglaze then added the sour cream. I didnt miss it - it was great over white rice.

Simple Malaysian Fried Chicken

So simple, yet so good! I took another reviews advice and added a few things to the marinade: a splash of lemon juice (lime would be great also) and a tiny bit of jalapeno (I didnt want it too hot) and some cilantro. Then, when I was stir-frying the chicken, I decided to throw in some sliced onion, green pepper, and even some zuccini I had sitting in the crisper. Then for the ultimate in laziness, I didnt even bother making more white rice; I just threw in some leftover I had and it was almost like a fried rice plate. More cilantro and green onion to top. It was really delicious!

Chicken Adobo II

I used boneless skinless chicken thighs, and although not in the recipe, I added an onion and about half a chopped red pepper I had on hand. Also, I put back the garlic towards the end, mainly because I love garlic and hate to throw out food! I steamed some white rice in the rice cooker and used the steamer basket to make some broccoli too, just for extra veggie benefits. Delicious!

Thai Green Curry Chicken

Really good, didnt have green onions, so used a regular one, plus added a sliced red pepper and some mushrooms I had on hand. May use slightly less curry paste next time (I didnt measure carefully - verrry hot!) All in all, a keeper. Dont forget the white rice!

Speedy Spaghetti

Seemed to taste better than the regular way of making spaghetti - the sauce really gets in there and flavors it! Plus one less pot to wash!

Baked Teriyaki Chicken

Loved this easy recipe! I added one sliced onion for fun and some frozen peas for color. Definitely going into the regular rotation. White rice is a must to go with this dish...
