Creamy Rice Pudding

Reviewed: Jul. 25, 2009
no need for two pans, but --other than that--I followed the recipe exactly as written. It was perfect!

Delicious Ham and Potato Soup

Reviewed: Mar. 16, 2009
Delicious! I cooked the butter/flour mix about double the time mentioned. I would also cut down the salt a bit next time around.

Fluff Dip for Fruit

Reviewed: Dec. 19, 2008
Excellent! I tried it with and without Kahlua. MUCH better with the Kahlua! I echo what others have said. I cut this recipe in half, and it is still a LOT.

Basic Truffles

Reviewed: Dec. 12, 2008
I tried these with almond flavoring, mint and with vanilla. The mint was definitely the best. I added a bit more cream (x1.5) and I didn't use a melon baller at all. Just rolled them up like cookies. I covered them with 4 different toppings: 1) chocolate sprinkles, 2) powdered sugar, 3)cocoa powder and 4) nuts. I would try all but the powdered sugar again.

Libby's® Pumpkin Roll with Cream Cheese Filling

Reviewed: Dec. 12, 2008
This looks as if it would be difficult, but it is actually quite simple. It looks great and tastes even better!

Easy and quick. Like the other reviewers, I doubled the chocolate chips and butterscotch.

Baked Potato Skins

Reviewed: Jun. 28, 2008
These were ok. I'm not sure if I would make it again, but if I did I would want to add something to give it a bit more flavor.

Sangria! Sangria!

Reviewed: Jun. 28, 2008
I followed this almost exactly, but I changed the fruit up a bit. I used some fresh peaches and I cut down a bit on the limes and lemon. I also cut the sugar in half...not as necessary with the sweeter fruit. I served this party and it was gone in a flash...DELICIOUS!

Party Pinwheels

Reviewed: Jun. 28, 2008
You can fill these with just about anything. I used fresh spinach, cheese, ham, olives and peppers. Tasted GREAT and it was REALLY easy. The only thing that I would chage in the future is to cut down on the cream cheese. It was a bit much.

Yummy Honey Chicken Kabobs

Reviewed: Jun. 28, 2008
So often when I have kabobs, it seems like they do not hold their flavor. I marinated this for over 24 hours, and they held the flavor VERY well. I only used chicken...no vegetables. Tasted GREAT!

Annie's Fruit Salsa and Cinnamon Chips

Reviewed: Jun. 28, 2008
one of the best appetizers/desserts I've had. PERFECT for summer barbeques. I made this with blackberries, strawberries, peaches, apples and kiwis; but I can't think of too many fruits that wouldn't work. I would cut down/elimate the sugar in most cases...especially if your fruit is already fairly ripe.

Extreme Chocolate Cake

Reviewed: Jun. 26, 2008
Very good cake...VERY chocolatey. The frosting is wonderful, but I might try it with a cream cheese frosting the next time around...just to break up the chocolate.

Peanut Butter Chip Chocolate Cookies

Reviewed: Jun. 25, 2008
I used Ghiradelli Chocolate chips in place of the PB chips; and I put in about 2/3 the amount of chips called for. I also added chopped walnuts. DELICIOUS!!!! Also--unless you make these quite large, you will likely end up with far more than the 2 dozen yield.

Double Tomato Bruschetta

Reviewed: Dec. 8, 2007
Definitely one of the best bruschettas I've had. I agree with the other reviewers in that the olive oil helps. Also, the sliced mozarrella gives it a better presentation.
