German Apple Cake I

Reviewed: Oct. 14, 2013
Great recipe. I baked it in a bundt pan at 325 for nearly an hour. Only changes I made were to substitute 1/2 the oil with apple sauce and to add in an extra cup of apples. Also added the caramel sauce mentioned in another review (1/2 C Brown Sugar, 1/2 cup butter and 1/4 c. cream); but could have cut the sauce down. The sauce is a great addition, but I don't think it is essential. The cake is amazing all on its own.

Cooked the chicken in the broth which I think added flavor. Also used all chicken broth and did not add any salt. Delicious!

Deep Dish Lasagna

I did not include the spinach, but I did add a full zucchini to the sauce. I also added a 15 oz can of tomatoes and decreased the water a bit. Added a bit of sugar to the sauce and used turkey sausage. Delicious!

Italian Sausage Tortellini Soup

Reviewed: Apr. 18, 2011
Very tasty. I used 7 cups of broth and eliminated the wine and water. In the future, I will use a bit less broth and a bit more water...it was a bit salty. I also put in a bit more sausage. In the future, I might add a bit more vegatables. Overall...a wonderful recipe.

Raw Apple Cake

Reviewed: Nov. 1, 2010
With just a few changes, this become one of my favorite cakes. I used fuji apples (peeled and chopped), added in walnuts, substituted applesauce for half the oil and used a bit more cream cheese relative to the powder sugar. I made this into a layered cake, so I baked them for about 25-30 min.

I eliminated the hot links, oregano, tumeric and bay leaves and used saffron. A bit pricey, but a great idea for a special occasion.

Roasted Chicken with Risotto and Caramelized Onions

Reviewed: Aug. 23, 2010
I did not use all of the broth, eliminated the wine and added artichokes. It took more than 20 minutes, but it was delicious,. Next time, I think I might try 1) using low-sodium broth and about 2) 1/2 only half the vinegar.

Artichoke Bruschetta

Reviewed: Aug. 2, 2009
I followed the recipe exactly except that I toasted the bread before adding the topping and I added tomatoes on top--very good. The only downside is that it does require you to be in the kitchen during a party. Artichoke dip is easier to take care of ahead of time.
