I had my husband pick up a couple of butternut squash at the Berry College produce sell. Now they have been sitting in my kitchen for a week while I walk by them each day and think what am I
going to do with you! I have had this thought many times each day for the last week. I seem to remember thinking I'll make something out of you tomorrow after I get the kitchen in better order. Well, after not feeling good for a day or two I see as soup!
The last time I tried to make homemade butternut squash soup I used a recipe that a friend found and it didn't turn out very well. I am not good at a lot of things but I am pretty good at research.
So off to the internet I go. I looked at lots of different recipes and none sounded good to me. Either too many ingredients or ingredients that I don't have on hand. So that means I have to make up my own. Sometimes this works out and sometimes not.
This time it turned out so good. I took what I thought would be the best of about 5 different recipes and turned it into a one pot meal. Caramelized squash and onions, white pepper, a little
honey, nutmeg and cream. Check out my Caramelized Butternut Squash soup, it is one of my best recipes yet.
