Almond Wild Rice

YUM! This is a delicious recipe! I did make a few changes...the grocery store I went to did not have plain wild rice so I used to a boxed premade version of long grain brown and wild rice. It already had chicken seasoning in it, so I omitted the broth and just used the amount of water the box states instead. I also sauteed onions and mushrooms first, then added the rice mix, raisins, and water. Stirred in the almonds and parsley before serving. Was ready in 30 minutes preparing it this way and is seriously good! Looking forward to serving it for Christmas Eve dinner tonight!

Creamy Carrot Soup

This soup is fabulous! I have been trying to find a good recipe for carrot soup since I always have a ton of carrots left over in the fridge. I was about to give up, thinking I just must not like the taste when carrots are the main ingredient in a soup. Boy, am I glad I gave this recipe a shot! I made some minor changes...used smart balance butter (just over a tablespoon) to saute the onions. I also used 1/2 a large sweet potato, and two small white potatoes. In the interest of cutting fat and calories, I used 1 1/2 cups fat free milk and 1/2 cup fat free half and half. Since I had fresh rosemary on hand, I added that instead of dried, about a full tablespoon. Used white pepper and kosher salt to season. Used an immersion blender to cream it all together. The result is wonderful...the ginger and rosemary are perfect together, flavorful but not overwhelming. The soup is creamy and light, but filling. It is delicious and I can't wait until my husband comes home tonight to see if he agrees!

Boudreaux's Zydeco Stomp Gumbo

Oh my goodness, this gumbo is delicious! I made this for my husband for his birthday, along with shrimp creole, and it was just perfect. I recommend making it a day ahead, as it was even better the 2nd day. This one's a keeper for sure!

Winter Squash Rolls

These rolls are delicious! If you only make 12, they come out HUGE! The second time I made these, I ended up with 36 smaller rolls. Either way they ended up delicious! Even my father, who doesn't like squash, thought these rolls were great! Thanks, I will definitely be making these again!

Delicious Ham and Potato Soup

YUM! This soup is so good! I followed the recipe almost exactly with a couple of substitutions and additions. I added carrots as well as a bit more onion and ham to the recipe, as well as some frozen corn. I used Better Than Bouillon Soup base instead of bouillon cubes. To make it a bit healthier, instead of butter I used smart balance light, and skim milk. Last, I added a bit of dried thyme which tasted great with the other flavors. I will DEFINITELY be making this over and over again. One of the best soups I've had.

Pumpkin Butter Cheesecake

This recipe is almost the same Paula Dean's Pumpkin Gooey Butter Cakes, which I have made for a couple of years. Let me tell you, I am a huge pumpkin lover, and once I began making these, my family insists that I bring them to every Thanksgiving and Christmas instead of regular pumpkin pie. They are so good. Everyone I have made them for absolutely loves them, they are a staple now at holiday parties and get togethers. You just have to be sure not to cook to long, or the crust will be overdone. The pumpkin part is really so yummy and gooey and the yellow cake mix compliments it perfectly. YUM! Oh, you can also make this a pineapple, banana, or peanut butter insteas of pumpkin. For pineapple, substitute a 20 ounce can of drained crush pineapple for the pumpkin. For Banana, sub. 2 ripe bananas instead of pumpkin. For peanut butter, use chocolate cake mix instead of yellow and substitute 1 cup creamy peanut butter instead of pumpkin.
