Cabbage Jambalaya

This elicited an "I love cabbage!" from my 3-year-old son. Definitely a keeper. I subbed in ground turkey, turkey sausage, and brown rice and it was still flavorful and filling.

Carrot Cake III

Jay's Signature Pizza Crust

I love this recipe and my husband does too. I make the dough in my food processor. Proof the yeast as directed, meanwhile mix 3 cups flour, the oil and salt together in food processor just to blend. When the yeast mixture is ready, add slowly while processor is on. Once the yeast mixture is absorbed, check the texture of the dough. I then add the extra 1/3 cup flour. Pulse until the dough is thoroughly kneaded and stretchy on outside. Continue rest of recipe as written.

Ropa Vieja

So good! I used a 3 lb. bottom round roast and subbed a 10 oz can of RoTel for the salsa. Cooked in Crock Pot for 8 hours on high, shredded beef and left in juices for another hour. We had it on corn tortillas with cheese and sour cream. Yum!

Super-Delicious Zuppa Toscana

This was actually better than the soup at the Italian chain. It had more kick from the red pepper, so if you don't like the kick, I'd decrease the amount of red pepper flakes. I paired this with garlic-parmesan breadsticks from Taste of Home cookbook. Yum!
