Eggless Chocolate Cake II

This recipe was by far the best "eggless" cake recipe that I have tried. I halved the recipe and made 18 cupcakes. I did use 1/2 the amount of oil, and the other half I used applesauce. I added about 7 or 8 chocolate chips to each cupcake before I put them in the oven. My entire family loved these, not just the one who has an egg allergy. Thank you Ginger P. for a definite keeper.

Luscious Four-Layer PHILLY Pumpkin Cake

This was delicious...I really enjoyed the pumpkin flavor in the frosting. I usually make a cream cheese frosting to go on top of my pumpkin cake, but my family enjoyed this frosting more. Thanks.

Applesauce Bars

Loved the cake...very moist and lots of flavor. I made it in an 8x8 pan, perfect for two. Next time I will try a cream cheese frosting.

True Blue Custard Crunch Pie

This pie is absolutely fantastic, and so easy to make. I did not use pecans in the topping because some of my family doesn't like nuts. Instead, I added another tablespoon of flour and another tablespoon of sugar. I also used 1/4 teaspoon of pumpkin pie spice in the topping. We ate the pie cold, but I'm sure it is great warm too. I will be making this again, and I may try apples, cherries, or raspberries another time too. Thanks for a quick, easy recipe.

Caramel Apple Pork Chops

I always make the recipe exactly as written the first time so I can review it honestly. This was very good, however, next time I will marinate the chops to tenderize them. I will also double the amount of sauce...then it will be perfect. Thank you for a very good recipe.

Fluffy Pancakes

As I sit through yet another snowstorm, I decided to make these pancakes. I made them exactly as written, and they were very good, and yes, very fluffy. I do think I will add a little vanilla next time. Thanks for an easy, delicious recipe.

Peanut Butter Frosting

I made this recipe using the quantities that TRindell suggested, using only 2 cups sugar, and making sure the peanut butter and butter were at room temperature. It was very good and spread very easy. I will make this again.

Slow-Cooker Chicken Tortilla Soup

This soup was very good. I was short on time, so I used a can of Costco's canned chicken (drained) and you couldn't even tell it was canned. I also added a can of black beans(drained and rinsed). Shredded Mexican cheese blend and store bought tortilla chips on top were the finishing touch. This was so quick to throw together in the morning before work. Thanks.

Summer Squash Bread

Vegetable Medley I

This was a very good recipe...actually my first using summer squash. I halved the amount of oregano and that was still plenty for us. Even my picky husband tried it and went back for a second helping. Thanks, we will make this often.

Pancakes I

This was a very good basic pancake recipe, and it was just the right amount for 2 people. I always used pancake mix from a box, but I still had to add the oil, egg amd milk. However, this will be much more economical. Thanks.

Freezer Peach Pie Filling

What a fantastic idea...I used 4 cups peaches for the 9" pie pan and added a crumb topping when I baked the pie. I also added 1 tsp. Fruit Fresh right to the sugar mixture, and the peaches didn't brown at all. My family raved about this, so I will be making a few more to have in the freezer for this winter. I will also try this with apples. Thnaks for the recipe.

Fantastic...I made it exactly as written and we loved it! Next time I will probably try using 1/2 applesauce for 1/2 of the oil. I usually try a recipe exactly as written the first time, before making any of my own substitutions. Thanks for a keeper.
