Pork Fried Quinoa

Yum! Tasted very close to pork fried rice (I'm Chinese), but was thrilled it was a lot healthier than eating a ton of white rice! Used pineapple chicken sausage from Costco rather than ham, and an extra clove of garlic. I think next time I will add half of a regular chopped onion for extra crunch. Green onion is really better on top at the end. Rice vinegar was a nice touch and not something I would normally think to put in fried rice. Will keep making this!

Fluffy Cake Doughnuts

Pretty good for baked donuts. :) Made in a mini cupcake pan rather than a donut pan. Makes about 30 mini cupcakes/donut holes. Added a little more powdered sugar to the frosting than what was listed. Would be good dipped in chocolate frosting too! They don't keep as well as traditional donuts though (probably because they're not covered in oil), so plan to eat them with 24-48 hours.

Butternut Squash and Turkey Chili

Added a can of black beans in addition to the kidney beans. More garlic, doubled the chili powder, and added 2 Tsp. chipotle powder. Used a can of jalapenos instead of green chilis for more heat. Used a can of corn instead of hominy. Served with jalapeno corn bread. Healthy when made with ground turkey, but I think it would be REALLY tasty with ground beef. :)

Soy Ginger Salmon

Ahhh-mazing! We eat a lot of salmon, but this is just the best asian-inspired marinade I've ever made. Will make again and again and again! I added 5-6 cloves of real garlic to the soy sauce marinade in addition to sprinkling garlic powder directly on the fish. Also added fresh sliced green onion to the marinade. Doubled the recipe for 2.4 lbs. of salmon, and it was the perfect amount of marinade. REALLY good! Marinated for 3 hours, and that was plenty. Might be too salty if marinated overnight, in my opinion.
