Lentil Soup with Lemon

This is fantastic! I didn't have any tomato paste or cilantro. I only used a few sprays of olive oil for the onions and garlic. Great recipe. Will be making again.

These are fantastic. Followed the recipe to a T. I halved the recipe and still got an ice cream pail full of cookies. Thumbs up from my 5 and 3 year olds and the hubby!

Mom's Zucchini Bread

My kid's LOVE this. I used 1/2 whole wheat and half white flour, replaced 1/2 the oil for applesauce. I reduced the sugar to 2 C used 1C white and 1C brown. It still came out very moist.

Apple Pumpkin Muffins

These are great muffins. I am on weight watchers so made some changes to make them healthier and only ONE POINT! I used whole wheat flour, splenda instead of sugar and applesauce instead of oil. They are still moist and delicous. I did have to cut the baking time by about ten minutes this way. My 3 and 2 year old children are enjoying them as we speak! The only problem I had was the first day they stuck to the paper wrappers but today they are fine.

Easy Granola Bars

YUMMY! These are so good even if you use low fat condensed milk(sweetned) and no butter. I wanted to eat the whole pan before I put it in the oven. I ran out of granola but replaced it with fiber one cereal. The most important part is the condensed milk and the coconut other then that you can totally play around with it.

Sweet and Sour Meatballs II

I made these for the second time tonite. I cut the vinegar back by 1/2. Used 1/8 C apple cider vinegar and 1/2 C white wine vinegar. I also used 1 1/2C of water. I did my own thing with the meatballs using 1/4C fiber one, 1/4 C quick cooking oats, 1 tsp garlic powder, 1/4 tsp seasoning salt, 1/4 tsp ginger, 1/4 of an onion, 2 egg whites and pepper to taste. This turned out great and will use this recipe again.

Grandma's Lemon Meringue Pie

To be fair I didn't follow this recipe. I wish I had. I did as previous posters said and substituted milk for the water and added an extra 1/2 tsp. of cornstarch. I juiced three lemons and used lemon extra instead of lemon rind. The result was a firm, bland pie that resembled vanilla. I threw the last peice out and felt terrible for serving it to my company.
