Shepherd's Pie VI

Excellent - this is the epitome of comfort food, and there's no better way to use leftover mashed potatoes. Like others suggested, I cooked the onion with some garlic, and omitted the beef broth and used a combination of 1/4 c Worcestershire, 1 cup water,1 packet of brown gravy mix, and a splash of port for a little more complexity. I also added a bag of frozen peas - which I think gave the dish some much needed color and texture. Very, very good.

Too Much Chocolate Cake

Excellent! Very moist, extremely chocolatey, and perfect with a tall glass of milk and some ice cream. I agree that mini chocolate chips are the best. I also like to garnish with fresh raspberries or strawberries. Yum!

Beth's Spicy Oatmeal Raisin Cookies

Excellent! I also replaced the shortening with real butter, and I added nutmeg, dried orange peel, ginger, allspice and extra cinnamon. Baking time was best around 8-10 minutes for especially moist cookies.

Whipped Shortbread Cookies

I also added 1/2 teaspoon vanilla, as previously suggested, and I beat the ingredients one at a time. I didn't have maraschino cherries, so I put used seedless raspberry jam instead - so good! Next time, I'll try adding melted white chocolate as well. They are verrrry crumbly, so be sure to let them cool a bit before transferring from the cookie sheet.

Herb Roasted Pork

This recipe was EXCELLENT - but I did make the minor adjustments suggested others. I doubled the spice rub, added rosemary, thyme and red pepper flakes, and pushed slivers of garlic into small slices I made in the pork. The sauce was divine, I didn't change a thing - it complemented the flavor of the pork perfectly. I tented the roasting pan and and cooked the loin for about an 1.5 hours (my loin was only 2.5 lbs). Perfection!

Crustless Spinach Quiche

As suggested by previous critics, I added tomatoes, feta cheese, cottage cheese and cayenne pepper. I also put the mix in muffin tins and the little individual quiches were a HUGE hit!

Microwave Corn on the Cob

This was fabulous and easy - nuked two ears at five minutes and it was perfect! I'd recommend sprinkling the corn liberally with lemon pepper before microwaving...it adds a wonderful little zing to the corn!
