BBQ Pork for Sandwiches

I accidentally bought bone in ribs, but 3 pounds still made enough to feed all four guys. No left over. They loved it. Used Sweet Baby Rays sauce. Don't skimp on the BBQ sauce, get a premium brand.

Cranberry Sauce

I doubled this recipe with 24 ounces of frozen whole raw cranberries, 2 cups of white sugar, and only 1 cup of orange juice (in other words I did not double the liquid). It turned out perfect. I little grated orange rind adds a nice zing too.

Grandmother's Buttermilk Cornbread

Pork Chalupas

All I can say is YUM. Perfect recipe as is. If it is too liquidy for you just drain. We used corn tortillas which tasted great but fell apart (because this recipe does come out very wet). Do use the flour tortillas, they hold up better.

Special Rhubarb Cake

You can go without the sauce if you want a coffee cake type thing, but dang if that sauce doesn't just send this otherwise "good" cake over the moon into "OMG!!!" I did use rhubarb, but the recipe would be good with any seasonal fruit or berry.

Hamburger Soup

This is delicious, and so easy. I added some edamame and other veggies. It is very forgiving. I have made it several times, each time following the recipe exactly but adding things I had on hand, such as left over corn, a handful of leftover rice, and edamame from my freezer.

Kettle Corn

Yum! 1/4 cup didn't pop much corn, but I was afraid to pop more in one batch in case it burned easily. I popped two batches of 1/4 cup each and followed the recipe and directions exactly. UPDATE: I tried using 1/4 cup raw sugar (sometimes called turbinado) and it was wonderful too. More carmely.

Rhubarb Pudding Cake

Delicious! I made it exactly as the recipe calls for. Used a square 8" pyrex baking dish. We loved the crunchy sweet crust, and might double that part next time. Easy, foolproof recipe.

Quick Quiche

This was excellent. I left out the teaspoon of salt, and it turned out perfect. The bacon made it plenty salty. I didn't have swiss cheese so used cheddar and it was wonderful. This is a versatile recipe, just about any cheese or veggie (such as mushrooms, shallots, spinach, broccoli or? ) would work well. If you don't put in a salty meat, such as ham or bacon, I would add the salt.

Easy French Dip Sandwiches

Creamy Yukon Mashed Potatoes

Oh my goodness. I used cream cheese and added a few tablespoons of butter that I had sauted fresh garlic in. My usually ho-hum mashed potatos were transformed into something heavenly. The kids didn't even want gravy on them they were so good by themselves!

Fresh Rhubarb Pie

Wow! Perhaps a tad too much sugar, but otherwise this is the best rhubarb pie recipe I have found. It is amazing how the same ingredients layered rather than mixed together can make such a huge difference. And do cook at a high temp on the bottom rack for 15 min., it makes the bottom crust firmer, which in contrast to the creamy texture of the fruit is just devine.

Monkey Bread I

brown sugar topping got a little grainy, perhaps I cooked it too long. Next time probably won't boil it for one minute, just let the butter melt until the sugar is melted and combined. Frozen biscuit dough works as well as the tube kind. Good recipe.

Sausage and Bean Ragout

This recipe was way too salty. My mistake was using two pounds of sausage rather than one pound of sausage and one pound of hamburger like the recipe called for. But it was so salty I would think even just using the one pound of sausage would be too much. Perhaps using unsalted tomato sauce and unsalted beans would help? Otherwise the flavor was very nice.
