Four Cheese Macaroni

Reviewed: Feb. 26, 2008
I changed this recipe too, with much better results. Left out the eggs, and made a cheese sauce by heating the half-and-half (I used whole milk instead) with about a tablespoon of flour until smooth and beginning to thicken. Add 8 ounces of sharp cheddar, 8 ounces of jack or mozerella, and 8 ounces of american or velveeta cheese. Stir on low heat until cheese is melted and sauce smooth. Mix with the macaroni and bake.

Quick Quiche

Reviewed: Mar. 4, 2008
This was excellent. I left out the teaspoon of salt, and it turned out perfect. The bacon made it plenty salty. I didn't have swiss cheese so used cheddar and it was wonderful. This is a versatile recipe, just about any cheese or veggie (such as mushrooms, shallots, spinach, broccoli or? ) would work well. If you don't put in a salty meat, such as ham or bacon, I would add the salt.

Salisbury Steak

Reviewed: Jan. 21, 2009
I followed the recipe exactly and would have given it five stars except as written it doesn't make enough of the yummy gravy. I doubled the gravy and this was just right. We had just enough extra to spoon some over the steaks and a little for mashed potatos on the side :-) My kids and hub loved this dish!

Kettle Corn

Reviewed: Nov. 27, 2009
Yum! 1/4 cup didn't pop much corn, but I was afraid to pop more in one batch in case it burned easily. I popped two batches of 1/4 cup each and followed the recipe and directions exactly. UPDATE: I tried using 1/4 cup raw sugar (sometimes called turbinado) and it was wonderful too. More carmely.

Hamburger Soup

Reviewed: Nov. 27, 2009
This is delicious, and so easy. I added some edamame and other veggies. It is very forgiving. I have made it several times, each time following the recipe exactly but adding things I had on hand, such as left over corn, a handful of leftover rice, and edamame from my freezer.

Special Rhubarb Cake

Reviewed: Sep. 29, 2010
You can go without the sauce if you want a coffee cake type thing, but dang if that sauce doesn't just send this otherwise "good" cake over the moon into "OMG!!!" I did use rhubarb, but the recipe would be good with any seasonal fruit or berry.

Easy French Dip Sandwiches

Reviewed: Dec. 19, 2010
Very good, very easy. I used jack cheese because I didn't have provolone and it was just as good (I've made this recipe several times using provolone). Kids love it.

BBQ Pork for Sandwiches

Reviewed: Dec. 19, 2010
I accidentally bought bone in ribs, but 3 pounds still made enough to feed all four guys. No left over. They loved it. Used Sweet Baby Rays sauce. Don't skimp on the BBQ sauce, get a premium brand.

Creamy Yukon Mashed Potatoes

Reviewed: Mar. 29, 2011
Oh my goodness. I used cream cheese and added a few tablespoons of butter that I had sauted fresh garlic in. My usually ho-hum mashed potatos were transformed into something heavenly. The kids didn't even want gravy on them they were so good by themselves!

Sausage and Bean Ragout

Reviewed: May 29, 2011
This recipe was way too salty. My mistake was using two pounds of sausage rather than one pound of sausage and one pound of hamburger like the recipe called for. But it was so salty I would think even just using the one pound of sausage would be too much. Perhaps using unsalted tomato sauce and unsalted beans would help? Otherwise the flavor was very nice.

Pork Chalupas

Reviewed: May 29, 2011
All I can say is YUM. Perfect recipe as is. If it is too liquidy for you just drain. We used corn tortillas which tasted great but fell apart (because this recipe does come out very wet). Do use the flour tortillas, they hold up better.

This tasted very strong of irish cream. My hub liked it but one kid didn't.

This is the best cornbread recipe I have made. I used half cup flour, 3/4 cup corn flour, 3/4 cup medium grind corn meal.

Grilled Salmon I

We didn't like the sweetness. A quality piece of salmon is best cooked simply and this was too cloying.

Beef Chimichangas

This turned into a sloppy mess. The tortillas were supposed to crisp up in the oven but never did. Luckily the ingredients tasted good anyway, but I won't make this again.

Barbecued Beef

Reviewed: Oct. 21, 2012
Great taste, but the sauce was very thin and soaked right through the buns, making a big mess. Would add something to thicken the sauce next time.

Cranberry Sauce

Reviewed: Nov. 21, 2012
I doubled this recipe with 24 ounces of frozen whole raw cranberries, 2 cups of white sugar, and only 1 cup of orange juice (in other words I did not double the liquid). It turned out perfect. I little grated orange rind adds a nice zing too.
