Roasted Vegetable Lasagna
The lasagna ended up being a little dry. Next time I'll use more sauce and maybe try Alfredo sauce on some layers. The roasted veggies were great-not crunchy I've had with other vegetable lasagnas. Will use this recipe again.

White Chocolate Macadamia Nut Cookies III
Cookies spread a little more than I liked. I like my cookies a little chewy though. I also added the zest of two limes to make the cookie have a little "pop" of flavor.

Souper Skillet Pasta
To make this recipe a little healthier, I added chopped spinach (drained), artichoke, and 1/4 cup fat-free ricotta cheese. Then I substituted macaroni pasta for cooked whole wheat penne, cut the cheeses in half, and sauteed with a half a cup of pasta water.
