About this Cook
I am a wife and mother and Nana. Before all of those things, I believe in God. He comes first in my life. I'm easy to get along with and love meeting people, having people over and cooking up a big meal with lots of laughs and good times.
My favorite things to cook
I love cooking soups and stews in the winter with bread and salads. Authentic Mexican and Italian dishes are awesome. Good ol' southern dishes are great. I'm open for whatever whenever the mood strikes me.
My favorite family cooking traditions
Growing up, I would sit in the kitchen and watch my mom cook. It's amazing the things I learned just watching. During the holidays, I'd go to my Grandma's and help her prepare dinner for our family...sometimes there would be over 100 people there and it was great. My earliest memories of cooking were of me standing at the stove on a chair, helping stir the gravy and frying eggs. Long before I was in school. I don't remember not cooking.

My cooking tragedies
The terrible meringue tragedy...ugghh!! It's definitely gotten better since the first time!

Fluffy Pancakes
Great pancakes! I made them exactly as written in the recipe and they turned out wonderful. True to it's title, my pancakes were fluffy and had a wonderful taste and texture to them! Definitely the go to pancake recipe in our home! Thanks for helping to make my husband very happy!

Sweet, Sticky and Spicy Chicken
I made this for dinner today and it was awesome! My family loved it and so did I. I followed the recipe as written and made these changes: 1. Added 1 t. crushed red pepper flakes & 1/2 t. cayenne pepper for additional spice. 2. I doubled all the ingredients of the sauce so there would be more on the chicken and since I was serving this over Jasmine Rice. 3. I dredged the chicken strips in flour and only let them brown...I did not cook them until done. 4. I did not add salt...it didn't need it with the hot sauce and soy sauce. 5. I let it reduce over low heat for about 15-20 minutes. It thickened wonderfully and was all that the title implies: sweet, sticky & spicy! Great recipe and one that my family is already asking for again! Thanks Kate!
