Easy Mexican Casserole

There are only two of us eating and I usually make tacos or taco salads and then have quite a bit of leftover taco meat. This recipe is a great way to use it up since leftover tacos don't go over so well! I scale this back by 25-50% and use the 1/2-3/4 lb of leftover taco meat then serve with guacamole, chips and homemade salsa (garden tomatoes, garlic, onion, jalapeno, cilantro and salt.)

Pork Chop and Rice Casserole

I would have given this a 5 star except for two things 1) needed a little more flavor - so 2nd time I made I added a package of dry onion soup mix 2) instant rice makes it mushy so 2nd time I made it I used brown and long grain wild rice and 3) I added a whole can of chicken broth and upped the rice to 1.5 cups since I used 8 palm sized butterfly boneless chops. It was definitely a 5-star recipe with just a little extra seasoning and regular rice. And no I don't like to change a recipe then rate it but if you are going to make it as written, I think you will be disappointed (read the other comments) and it doesn't need to be re-written...just needs a little tweak!

Pineapple Upside-Down Cake VII

This was excellent but only gave it a 4 because I thought there was a bit much brown sugar. I used 1 1/2 cups firmly packed, but maybe the recipe didn't mean for it to be firmly packed since it does not say that. So maybe I used too much! Next time I'm cutting back a bit and I bet we will be able to give it a 5!

Boiled Fruitcake

EXCELLENT! I have always bought fruitcakes that are about $40 + shipping each! I don't need to buy a fruitcake anymore! I doubled the nuts to 1 cup but next time will probably use 2+ cups nuts. I used about 1 cup mixed fruit and the rest made up of dates, golden and regular raisins. Soaked all fruit in dark rum about 12 hrs before. One significant change was that I substituted 1/4 cup of the white sugar with 1/4 cup dark molasses. I don't like the taste of molasses but I like a dark fruitcake and it was not molassey tasting, but gave it the color I wanted. I used about 1/4 cup less milk to compensate for the extra liquid. So to be clear, I used 1 1/4 cup white sugar and 1/4 cup molasses. Also added about 50% more allspice plus about 1/4-1/2 tsp extra cloves, cinnamon and ginger as we like a spicy cake. Still wasn't too spicy when done though. I put this in 2 greased loaf/bread pans and did not wrap the pans with newspaper - what is that for anyway? Baked 25 mins at 325 then 50-55 mins at 300. Could have baked a little shorter like maybe 45 mins at 325 and would have been fine. I had no idea what to do when they came out of the oven but I removed from pans, brushed w/dark rum only on one side, wrapped in foil and refrigerated overnight. Opened up the next morning, brushed all sides with dark rum and re-wrapped in plastic then foil--but I sliced off a piece to taste and it was AWESOME!!! Just wish it had more nuts, but great flavor! I will make this every year!

Green Tomato Bread

Great great idea, but it was kind of bland. I put extra walnuts but that is the only change I made. Maybe using 1 cup brown sugar and 1 cup white sugar instead of 2 cups white. It lacked some depth. Next time I will try the brown sugar and I bet that will make it perfect as it definitely had great texture and good flavor.

Meatloaf with Fried Onions and Ranch Seasoning

This was great! If you don't have the ranch seasoning mix just add some garlic and onion powder, some seasoning salt, some minced onion and some dill. I also did the ketchup and brown sugar mixture over the top and it was awesome!

Ninety Minute Cinnamon Rolls

These were very good for the 90 minutes it took. Actually I had baked a Paula Deen recipe I found on the internet a couple days before and these tasted better, but the actual bread part was not as good as the Paula Deen ones which had two separate times to rise. So if you have time, do the two risings, and use this recipe. I think why we liked it much better than the Paula Deen was that this one uses brown sugar and Paula Deen uses white sugar. The brown sugar has the best flavor but the 2nd rising is what makes the lightest and fluffiest cinnamon rolls

Glazed Meatloaf I

Best meatloaf ever. Made exactly to recipe except that I cut the recipe in half because I had only one pound of meat. And instead of using 1.5 slices of bread I used two It was excellent. Tore the bread up in little pieces which I have never done in a meatloaf before and we loved it!

Slow Cooker Cilantro Lime Chicken

Made exactly to the recipe. Cooked about 8 hours on low and it shredded SO easily! Served with flour tortillas, pico, sour cream and salsa. Really great! Don't overdo the lime. I used one medium size but very juicy lime and it was almost too much for my taste

Shrimp and Peanut Butter Noodles

This was amazing! I used rice noodles because that is what I had. I also didn't have black vinegar so used vinegar instead. Increased sauce proportions by 50%. Added 3 medium cloves of garlic and some chili paste and it was AWESOME!

Angela's Awesome Enchiladas

I tasted these...made 9-25-12 right before leaving for Dallas to leave for the fam to heat up the next night when I would be out of town. Made from cooked leftover chicken. Made my own enchilada sauce from the Ten Minute Enchilada sauce recipe on this site. Very good! Didn't have green onions or black olives but those would have been a good addition. Cut this recipe in half but still used 5 eight inch flour tortillas and it was plenty for 2-3 people

Taco Pies

We loved it. I baked the pie crust til it was totally done. Used 1/2 can of beans that were warmed upon the bottom. 3/4 lb of ground beef cooked with onion and seasoned with taco seasoning. Then quite a bit of raw onion, a thin layer of Pace Picante sauce, about 1 cup of cheese, 1 1/2 cups crushed Santitos (these were perfect!) then another 1-1 1/2 cups of cheese. Baked about 15 minutes. Topped with sour cream, salsa and lettuce.

Boilermaker Tailgate Chili

Made this when I got home from Maine and wanted something spicy. Sep 2012 Did everything as in the recipe but only 1/2 green and 1/2 red pepper. Used the Regular Chili Powder from Penzey's. 4 cans diced tomatoes and 4 cans beans. 1/2 of lg jalapeno peeled and seeded, 2 stalks celery and 5 slices cooked bacon with about 1 Tbsp of bacon grease. Next time will saute the veggies in the grease as recommended by others. Used about 1/2 of a Boulevard Wheat beer and instead of bouillon cubes used a can of beef broth

Yellow Squash Casserole

Made on 9/3/12 - next time BARELY cook the squash - for 4 cups squash keep it to 1/2 cup onion since I used about 1 cup and didn't like it. I also used 3 lg. strips bacon which was good. I used about 40 crackers and 6T butter IN the casserole and still 2T on top. I drained it VERY well after cooking the veggies but it was just too mushy.

Simple BBQ Ribs

Easy easy easy! Made just like the recipe states. Boiled 45 minutes, let sit 30 minutes in the hot water then baked 1 hour in a foil pan to avoid the clean up mess.

Asian Lettuce Wraps

Made this 8/30/12 - Used ground pork and sesame oil instead of regular oil. Did not have or use hoisin. Used fresh ginger instead of pickled. Added some lime juice and extra soy. Grated carrots to put on the lettuce. It was great! Oh---don't forget to make the dipping sauce with the sesame oil, soy sauce, chili sauce, rice wine vinegar and a little sugar.
