Easy Mexican Casserole
There are only two of us eating and I usually make tacos or taco salads and then have quite a bit of leftover taco meat. This recipe is a great way to use it up since leftover tacos don't go over so well! I scale this back by 25-50% and use the 1/2-3/4 lb of leftover taco meat then serve with guacamole, chips and homemade salsa (garden tomatoes, garlic, onion, jalapeno, cilantro and salt.)

Pork Chop and Rice Casserole
I would have given this a 5 star except for two things 1) needed a little more flavor - so 2nd time I made I added a package of dry onion soup mix 2) instant rice makes it mushy so 2nd time I made it I used brown and long grain wild rice and 3) I added a whole can of chicken broth and upped the rice to 1.5 cups since I used 8 palm sized butterfly boneless chops. It was definitely a 5-star recipe with just a little extra seasoning and regular rice. And no I don't like to change a recipe then rate it but if you are going to make it as written, I think you will be disappointed (read the other comments) and it doesn't need to be re-written...just needs a little tweak!

Pineapple Upside-Down Cake VII
This was excellent but only gave it a 4 because I thought there was a bit much brown sugar. I used 1 1/2 cups firmly packed, but maybe the recipe didn't mean for it to be firmly packed since it does not say that. So maybe I used too much! Next time I'm cutting back a bit and I bet we will be able to give it a 5!
