Vegetarian Gravy

This recipe was a huge hit at the holiday dinner potluck I brought it to! Vegan, vegetarian, and meat-eaters alike were looking for things to dip into it and pour it onto by the end just to scoop more of it up. I added mushrooms (which I food processed), Italian herbs instead of sage, and Bragg's liquid aminos, a delicious healthy alternative to soy sauce, and no yeast. It was wonderful. I've promised my partner to make it again for our holiday dinner.

Low-Fat Blueberry Bran Muffins

I add nutmeg, cinnamon, & 1/2 c. nuts. Sometimes I double the blueberries or use other fruit (like apples). I also often use a banana or yogurt instead of the apple sauce. Make them all the time & love them!

Stuffed Acorn Squash II

Soy Sauce Substitute

I am intolerant to soy and this recipe is awesome!! Now I can cook a lot of things I wasn't able to since I discovered my intolerance. I followed the recipe except I used veggie bouillon instead to make it vegetarian. It is a little thicker and sweeter than soy sauce but it works great and is tasty. Very salty, but that's to be expected.

Avocado, Tomato and Mango Salsa

This was excellent. My husband only likes Mexican food made by madre and me... this got his approval. I included all the seeds with the whole diced jalapeño and used multi-colored cherry tomatoes because that's what I had. YUM. Will make this again for sure!

Chewy Chocolate Cookies III

This recipe made some super tasty cookies! I didn't have the chocolate chips but they were kind of perfect that way. My partner was craving cookies and these hit the spot. I baked a batch at 9 mins and also at 10. I think the 10 min were perfect, still chewy and soft but held together better but I bet it depends on your oven, I think mine runs slightly cool/uneven.
