Easy Chicken Rice Casserole

Reviewed: Mar. 24, 2003
I added a bit of water after 60 minutes as it was looking kind of dry. Then I baked it for the full length of time but I don't think it needed that long. It was a little on the bland side, but I guess that is why my picky hubby liked it. I loved the fact that that it was super easy! Will make again. If he likes it and it's easy, it's a keeper!

Bacon Turnip Mash

I'm not a very big fan of turnip, but my husband is so I made this for him. I think I liked it as much as he did! Will definitely make again.

Cheesy Potato Kugel

Reviewed: Mar. 24, 2003
This is good stuff. Unfortunately, I had to substitute onion powder for the onion on account of a picky hubby, but it was still good. I found it needed a little longer than the time called for. I fit it into a loaf pan, really packing it in, but maybe next time I will divide it between 2 loaf pans (that way I can add the onion to mine!) The leftovers are great fried or cold and picky hubby has asked me to make it again!

Hotdish No One Likes

Reviewed: Mar. 24, 2003
This is no exciting gourmet recipe, but that's okay because it doesn't claim to be. Pretty much any spices or different vegetables could be added to liven it up, but then if that's what you're after, find a different recipe. If you want simple, hearty, easy, and cheap, try this one. The beauty of this recipe is its simplicity.

Italian Dressing Mix

Reviewed: Mar. 24, 2003
This recipe is fabulous! I used about half the amount of salt it calls for, and found that to be plenty. Even my picky husband, who never eats any dressing other than Ranch on his salad, loves this Italian dressing. I can't wait for Christmas as I plan to make this in pretty glass bottles to give to everyone on my list!

Cola Chops

I was very skeptical about trying this recipe, but I am so glad I did! It's so easy, and it tastes great! The sauce was great over rice. Even picky hubby loved it! I will definitley make it again.

Cocoa Fried Chicken

Reviewed: Mar. 25, 2002
I was a little disappointed and maybe a little relieved that I could not taste the chocolate in this recipe! I also found that frying the chicken over med-high heat was too high--the chicken was dark brown on the outside and raw in the middle. The coating was crispy and delicious, though. I will make this again, omitting the cocoa and cooking on a lower heat, and I think I will end up with an awesome recipe for chicken nuggets!

Minnesota Pork Chops

I haven't found a lot of recipes for wild rice that don't require cooking it first, so I love how simple this recipe is. I don't care for mushrooms, so I left out the mushrooms and used cream of chicken soup instead of mushroom soup. I also halved the recipe and did it in a 9x9 pan since it was just for hubby and me, but I guess I shouldn't have--he really liked it and was looking for more!

Baked Slow Cooker Chicken

Reviewed: Mar. 25, 2002
This recipe was great! It does need to go under the broiler afterwards to crisp up the skin a bit, though. I left the chicken whole and it turned out fine, I will definitley make again, especially in the summer when I don't want to have the oven on.

Best Wild Rice Salad

Reviewed: Jan. 26, 2002
I had cooked wild rice leftover that I wanted to use up, so I tried this recipe. I was afraid that my very picky husband wouldn't like it, but we both loved it! However, we did think it could use more chicken. It's delicious, though, and definitely going on my list of favourites!

Chicken Spaghetti II

Reviewed: Sep. 16, 2000
Very good. Has the simpicity and satisfaction of real comfort food. Even my picky husband asked me to make it again. I left out the green chile peppers (on account of the picky husband) but it was still very tasty and didn't taste like there was anything missing. To make it quicker, though, next time I will just cook the chicken in a pan or microwave while the pasta is cooking-it doesn't really have to be boiled.

Apple Slices

Really good. Although maybe a little too sweet if the apples used are sweet ones to begin with. Basically a flat apple pie, which is nice because you get more crust this way. (And the crust is always the best part of pie anyway, isn't it?) :)

Apple Pie Bread

An easy to follow recipe with a delicious result! I would, however, be inclined to use basically the same recipe but make muffins instead just because they don't bake as long and could be ready and eaten sooner!

Great for when you have things to do after supper! There is no baking dish to scrub clean afterwards, making clean up a breeze!
