Just pulled them out of the oven...getting ready to gobble some up with my homemade sausage gravy. They're pretty but not as tall as I would have liked. I used butter instead of shortening and buttermilk instead of regular milk.

Chicken with Quinoa and Veggies

AWESOME!! I only made a few changes...I omited the second 2T olive oil, no need for it. Instead of zucchini (I don't care for it cooked), I substituted a 12oz pkg baby bellas. My pkg of feta was 6oz and I just used it all. At the end, I mixed in the quinoa and a little while later, it soaked up all of the liquid. Yummy!!

Grilled Chicken Skewers with Mango and Pineapple

This was good. Not too spicy for my 11 yr old son. He loved it. My mango, unfortunately, wasn't too ripe, but man...the onions! I gobbled them up! I saved a bunch of the dressing and will have it on a salad today. I loved it!

BBQ NY Strip

Now, this was yummy! We all (my 11 yr old son, neighbor, and myself) gobbled it up with roasted potatoes and asparagus! I didn't do it on the grill b/c it was rainy and windy and cold, but I broiled it on high-10 minutes on the first side and about 6 minutes on the second. PERFECT!

Roasted New Potatoes

These were great, except VERY SALTY. I would cut out the salt totally. Also, I cooked them at 450 for only 10 minutes or so b/c the garlic was starting to get too brown, so I dropped it to 400 for the last 35 minutes.

Awesome Honey Pecan Pork Chops

Only reason it got a 4 is because I totally tweaked it. Oh man...but after I did! Sooooo tasty! Here's what I did: I marinated some boneless slices of pork loin (not sure how much b/c I took it from a large loin and froze it earlier)in 2 cloves of garlic, 1 tablespoon soy sauce, and 1 tablespoon honey for like 4 hours or so. I took the marinated pork and dredged it in 1/4 cup flour-I don't think I added the S&P. I melted 6 tablespoons of lite Smart Balance and cooked 1/2 chopped onion and 2 pressed garlic cloves then added the pork. Cooked it a little and then turned it over. I took the pork out and put it in a casserole. I put 2 tablespoons honey and 1/2 cup chicken broth and 1/4 cup chopped pecans to the pan with onions and garlic. Cooked it just a bit, then poured it over the pork in the casserole dish. I put the lid on it and cooked it for 15 minutes at 350 degrees. Oh my goodness, it was crazy good! I had it with jasmine rice and some yummy veggies.

Chesapeake Bay Stuffed Rockfish

I live on the Chesapeake Bay (Virginia) and this is pretty good! I used freshly caught rockfish from my next door neighbor. I will certainly try it again.

Honey Wheat Bread I

I first made this recipe by the book. It didn't rise like I wanted it to. Then I read a comment that I saved from someone else who used extra yeast. I made the recipe again and made a few changes...1. I used 2 packages of yeast. 2. I used fat free evaporated milk. 3. I added 1/3 c ground flax seed. 4. I used canola oil instead of shortening. Wowee! It was great. I made a grilled cheese with it over the weekend and OHMIGOD! It was soooo good!
