Too Much Chocolate Cake

I used the recommended 1 cup of oil and it turned out PERFECT!!! I also used the 3.5oz box of instant chocolate pudding and not the 5.9oz. I used the mini chocolate chips and that helped keep them from falling to the bottom. This is a Great cake to take to a Pot Luck or for someone who really loves chocolate...I used Powder sugar on top but next time I may drizzle some White Chocolate !! I WILL be making this again :)

Banana Banana Bread

This is one of the BEST banana bread recipes I've tried. I did add 1tsp of Vanilla extract, 1Tsp Cinnamon, 1/4Tsp Nutmeg and a cup of chopped Walnuts. I used 3 large very ripe bananas. I baked them as muffins. Baked at 350 degrees for 30mins or until a toothpick came out clean. This recipe is very moist and full of yummy banana flavor. I will make this again and again!!!

Restaurant-Style Hashbrown Casserole

This is a good Pot-Luck dish. Its very easy to make and is yummy. I made the following changes. In addition to the Cream of Chicken soup, I added Campbell's soup Chedder Cheese. I also added 8oz (1cup) of Sour Cream. I use unsalted butter so the dish wasn't too salty. I also only added 1/3 cup of chopped onion.

Lemon Bundt Cake

I just made this cake yesterday and it was the first Bundt cake I've ever made. It turned out great and everyone loved it. I used Spray oil that contained flour and sprayed the entire pan really good...I turned the pan upside down on a paper towel to drain any extra oil before adding the batter to the pan (this helps it from getting gummy). This is a great Lemon cake recipe. I also did the Lemon glaze which really brought out the lemon flavor. Its very easy to make and a nice tasting, moist cake. I will make this cake again!

Crunchy Peanut Butter Balls

I was given these as a Christmas gift from a co-worker last year and loved them! I immediately asked for the recipe and to my surprise, they are very easy to make!! I made them for my family Christmas get together and my entire family loved them!! I did not change the rice crispie amount. Before dipping in chocolate, I let them cool in the fridge for 5-10 mins.

Chocolate Chip Pumpkin Bread

I've been making this recipe for 4 yrs now and they are always a big hit!!! I make about 5 batches every Holiday season. This is hands down, the BEST pumpkin chocolate chip recipe! I change the nutmeg amt by adding half tablespoon nutmeg and half tablespoon of pumpkin pie spice. I keep what the recipe calls for and add a tablespoon of cinnamon. I changed the amount of chocolate chips and add almost a full bag of mini-semi sweet chocolate chips! I use a muffin size mini-loaf pan and it makes about 36 large mini loaves. I reserve 1/3 of the chips to top the loaves and then add the rest to the batter. After spooning the batter in the pan, I top a generous amount of chips to the batter and then bake for 30mins. Because the chips are on the top of the loaves, you have to be careful and let them fully cool so the chips don't melt all over your hands. The mini chips at the top of each mini loaf add a nice detail to these treats. Although I love to add a lot of chocolate chips to this recipe...it is good without the chocolate too. The spice of the bread is good on its own.
