About this Cook
I am a stay at home mom of two wonderful boys Evan 29 mos and Patrick 10 wks who I love cooking for along w/ my husband. I must say both of us have put on some extra "baby weight" since so I am trying to keep it healthy but the joy of cooking and eating gets in the way lol.
My favorite things to cook
I enjoy making slow cooked meals like Ham, green beans & potatoes, Beef Stew, Potato Corn Chowder, Chile, Roast Beef & Mashed Potatoes and it's been a while but Galumpkies too... hmm think I need to go to the grocery store.
My favorite family cooking traditions
I come from a long line of great Pa Dutch cooks so I love to just throw things in a pot. When I first moved out on my own I was really frustrated... I would call my mom and ask for a recipe and she always say I don't know you just throw this and that in lol. I look back now and realize that's probably what made me such a good cook.
My cooking triumphs
My biggest was my Potato Corn Chowder. My husband and I were in Vermont and happened upon a street fair where a women was selling it... it was so good we sat on a park bench and gobbled it. When I got home I went online looking for chowder recipes none of which I felt would give me what I wanted so I printed a bunch and took ingredients from some and made my own... it was so good!
My cooking tragedies
Raspberry pie... I ended up w/ raspberry soup :-(

Quiche Lorraine II
My family loved this quiche including my 20 mo. old son! I had to increase the oven temperature and bake longer for it to set but it was so delicious and creamy. I also added mushrooms cooked with the onions to add an additional texture. All in all a great base recipe to play with adding things!

Buffalo Chicken Dip
This dip is always a hit. I changed the recipe a bit using 3 chicken breasts sauted w/ salt, pepper, and basil in olive oil then roughly chopped. I also cut the cream cheese to 1 1/2 blocks and used blue cheese dressing.
