Pico de Gallo Chicken Quesadillas
This is by far the BEST Quesadillas I have ever had, and the Pico de Gallo is like no other. This is now a family favorite! However, it is a bit spicy for the kids so I will probably make it for company instead or reduce the amount of jalapeno. I do wish I would have read the reviews ahead of time, because it is a very time consuming recipe, but well worth it. I will do as suggested and do all the prep the day before. The Pico de Gallo is so good we are going to take the leftovers and blend it to make a salsa like dip for chips. I can see already that the Pico de Gallo is going to get used quite a lot at our house, it may replace salsa all together! Thanks so much for a great recipe!!!

Cheddar Baked Chicken
We loved this recipe. I made very few changes. I used garlic salt instead of garlic powder and salt, and I eliminated all the butter to cut down on fat. Cooking time was a little longer then 40 minutes, but it still turned out juicy and delicious. Thanks so much for sharing!

Asian Tuna Patties
This was good recipe. I say good because I thought it was a little dry. The only thing I changed was the corn meal and vegetable oil. I sprinkled with seasoned bread crumbs instead and I used cooking spray to cut back on the fat. Next time I am going to try and use more teryiaki and/or soy sauce and a little less bread crumbs to try and moisten the patties a bit more. I thought the patties had a wonderful taste with a hint of asian zing. Maybe could use a little ginger to spice it up a bit. But all in all it was very good and my family really enjoyed it. This is a keeper in my book, just needs a little adjusting. Thanks!
