Hungarian Mushroom Soup

Reviewed: Mar. 17, 2002
I give this soup a round of applause!!! Okay, I may sound like a total idiot, but I just loved this! I was expecting it to be similar to Cream of Mushroom Soup, but it was more of a flavorful soup than a creamy, rich one. True, it was rich even though we used Skim Milk and Light Sour Cream. But it was fabulous nonethless! I can understand why some previous reviewers opted to lessen the lemon juice and dill. However, I think they all added to the flavor in a wonderful, round-about way. The only change I made is to use fresh basil instead of parsley because our parsley plant is, um, dead, but it was still excellent! With some bread and a salad, this soup is a complete meal. This might sound weird, but next time, I would consider adding some bacon. I think that would kick up the flavor another notch! (Quoting Emeril now :o) Some potatoes or chicken added might be good as well. Then it would be almost like chicken stroganoff soup? Yummy. This is one of my favorite soups!!! Oh, by the way, it was so easy to make! I am 15 years old and have only been cooking for about a year or so and found it SO easy! In fact, I did it while doing my homework. HIGHLY RECOMMENDED!!!

Grilled Potatoes and Onion

Reviewed: Mar. 1, 2002
Don't let the simplicity of this recipe throw you off! We absolutely love to grill our vegetables. My Suggestions: Use olive oil instead of butter, because it is healthier and adds a great flavor to the veggies. Add some cloves (or in our case, a whole bulb!) of garlic for added flavor. Don't worry about a pungent flavor; cooked garlic mellows beautifully. Add some fresh (or dried) herbs, such as *basil*, parsley, or dill. Salt and pepper to taste. Also, add other veggies. Don't be afraid to experiment! Grilled zucchini, carrots, and mushrooms are all wonderful. You really don't have to measure, just use as many veggies as you would like. This recipe, as is, is an excellent starting point for us veggie-lovers (such as me!!!)

Gingerbread Men

These are the best gingerbread cookies. My mom has made them for years. The dough is absolutely wonderful. I would suggest underbaking slightly. This may taste good as a drop cookie. I might try that next time.

Pasta Fagioli

Reviewed: Feb. 19, 2002
I can't say I particularly cared for this. It was much too SPICY and had way too much celery. If you make this, you should decrease the amount of red pepper. The best part was the smell it made. May try this again with revisions.

Lowcountry Shrimp and Cheese Grits

Reviewed: Jul. 27, 2001
Pretty good. We couldn't find the garlic cheese spread at Kroger's store so we improvised and used a mixture of cheddar cheese, cream cheese, and garlic to taste. It turned out OKAY.

Peanut Butter Fudge III

Reviewed: Apr. 15, 2001
The reason the person before me didn't get such a good result is because the temperature of the fudge is wrong. You need to take it to the soft-ball stage, which is between 234-240 degrees Farenheit. It was the submitter's fault. It was delicious though once I changed the temperature.

You can tell that it is low-fat. There is no substitute for good ol' fashioned french toast.

These were wonderful. The only thing I would do different next time is to add less marshmallows.

Potato Casserole II

My aunt makes a casserole similar to this every year... all I can say is YUMMY! The potato chips really add to the whole potato theme and enhance the dish overall. A highly recommended indulgence!

Jan Hagel Cookies

Reviewed: Dec. 11, 2001
Funny that I should find this recipe today. My mom just made a huge batch of this type of cookies. I never thought I would see this recipe anywhere else. These are a tradition in my family! It just isn't Christmas without these cookies. They are crispy, slightly sweet, and just melt in your mouth. Scrumptious!

Allspice Cream Cheese Frosting

Reviewed: Jul. 31, 2001
Wonderful! However, I agree that it should say one 8 oz. package of cream cheese instead of one 3 oz. With a 3 ounce package, you can't even taste the cream cheese! Thank goodness I test-tasted it though! I used it to frost Lite Carrot Cake. It was a smashing combination! It was still super rich even though I used Neufchatel Cheese. YUMMY! I would make it again, but I'm afraid I will eat it all.... :(

Super quick and easy to make. However, I don't understand why this recipe could of gotten so many rave reviews. They were just average rolls, nothing too special. I give it **.

Oatmeal Pancakes I

Reviewed: Jun. 25, 2001
The original recipe definitely needed improvement. I decreased the amount of oats and increased the amount of liquid. It took a while to acquire the correct proportions. But, after that they were pretty good. As written, this recipe is not worth trying, but it does have potential, if taken some vital alterations in account.

Of course these are going to be delicious. After all, they DO have four sticks of butter in them! Perhaps a more accurate name would be Cholesterol Casserole?!?!

Spiced Up Potatoes

Reviewed: Nov. 28, 2001
This recipe needs to be revised. 1) If you are like me and have ever tasted canned potatoes, then you probably know that their taste barely resembles fresh potatoes. If you are going to make this recipe, I STRONGLY recommend you use FRESH potatoes. Canned ones are gross! Also, 2) The amount of salt in the recipe is way too much! I would recommend only 1/2 teaspoon. You can always add some more salt, but it is quite hard to take it away once you have added it. If you are still ISO a garlic flavor, add a few cloves of freshly minced garlic. Yum! With these revisions, this recipe MIGHT be worth trying.
