Hungarian Mushroom Soup

I give this soup a round of applause!!! Okay, I may sound like a total idiot, but I just loved this! I was expecting it to be similar to Cream of Mushroom Soup, but it was more of a flavorful soup than a creamy, rich one. True, it was rich even though we used Skim Milk and Light Sour Cream. But it was fabulous nonethless! I can understand why some previous reviewers opted to lessen the lemon juice and dill. However, I think they all added to the flavor in a wonderful, round-about way. The only change I made is to use fresh basil instead of parsley because our parsley plant is, um, dead, but it was still excellent! With some bread and a salad, this soup is a complete meal. This might sound weird, but next time, I would consider adding some bacon. I think that would kick up the flavor another notch! (Quoting Emeril now :o) Some potatoes or chicken added might be good as well. Then it would be almost like chicken stroganoff soup? Yummy. This is one of my favorite soups!!! Oh, by the way, it was so easy to make! I am 15 years old and have only been cooking for about a year or so and found it SO easy! In fact, I did it while doing my homework. HIGHLY RECOMMENDED!!!

Grilled Potatoes and Onion

Don't let the simplicity of this recipe throw you off! We absolutely love to grill our vegetables. My Suggestions: Use olive oil instead of butter, because it is healthier and adds a great flavor to the veggies. Add some cloves (or in our case, a whole bulb!) of garlic for added flavor. Don't worry about a pungent flavor; cooked garlic mellows beautifully. Add some fresh (or dried) herbs, such as *basil*, parsley, or dill. Salt and pepper to taste. Also, add other veggies. Don't be afraid to experiment! Grilled zucchini, carrots, and mushrooms are all wonderful. You really don't have to measure, just use as many veggies as you would like. This recipe, as is, is an excellent starting point for us veggie-lovers (such as me!!!)

Pasta Fagioli

I can't say I particularly cared for this. It was much too SPICY and had way too much celery. If you make this, you should decrease the amount of red pepper. The best part was the smell it made. May try this again with revisions.

Broiled Zucchini With Rosemary Butter

To tell you the truth, we didn't think this recipe was as good as the other reviews led us to believe. The lemon juice seemed to completely overpower the delicate taste of the zucchini. Maybe decreasing the lemon juice? Can't say we would make again. Sorry, Light & Tasty, we still love your magazine!

Baked Scallops

If you would decrease the bread crumb mixture by half or so and serve with some lemon juice, then they would be pretty good. I don't think the Parmesan Cheese serves much of a purpose, however, as I could barely taste its presence. All in all, an okay recipe, but in my opinion, not worthy of raves. Can't say it will be made again. Or maybe I just don't like scallops? I thought they were kind of sweet. Thanks anyways.

Sunshine Toast

My mother used to make this for me for breakfast when I was younger. She called it "Egg in a Frame", and I dipped the excess bread slices into the yolk. I no longer like eggs at all, but I have to give this recipe ***** because it reminds me so much of my childhood, a.k.a. "The Good Old Days". :)

Beer Bread I

I give this three stars. While it is amazing that such a simple recipe can yield a fairly acceptable bread, I do not think this is worthy of being compared to a fine yeast bread. The texture was great warm out of the oven: it was deliciously crisp on the outside and moist on the inside even without butter. Afterwards, we brushed butter on the warm loaf to soften it a little bit. The next day it was dry and had lost its original flavor. Would I bake it again? Yes, on the fly. But for company or for a holiday? No way.

Jan Hagel Cookies

Funny that I should find this recipe today. My mom just made a huge batch of this type of cookies. I never thought I would see this recipe anywhere else. These are a tradition in my family! It just isn't Christmas without these cookies. They are crispy, slightly sweet, and just melt in your mouth. Scrumptious!

Spiced Up Potatoes

This recipe needs to be revised. 1) If you are like me and have ever tasted canned potatoes, then you probably know that their taste barely resembles fresh potatoes. If you are going to make this recipe, I STRONGLY recommend you use FRESH potatoes. Canned ones are gross! Also, 2) The amount of salt in the recipe is way too much! I would recommend only 1/2 teaspoon. You can always add some more salt, but it is quite hard to take it away once you have added it. If you are still ISO a garlic flavor, add a few cloves of freshly minced garlic. Yum! With these revisions, this recipe MIGHT be worth trying.

Better Than Sex Cake II

This is sooo delicious. One of the best cakes I have ever had in my life. I used the entire can of sweetened condensed milk. Next time I will use the whole 12.25 can of caramel topping. Everyone loved it, but I need to go now. I promised my cousin I would e-mail her the recipe!
