Mustard Chicken

My family LOVES this chicken! We call it "Everyone's Favorite Chicken"! I use boneless, skinless tenderloins and either spicy or dijon mustard, whichever I have on hand. Only takes about 20 minutes in the oven. Yum, yum!

Pineapple Fried Quinoa

Have made this several times now, but made quite a few changes. I use 2 cups chicken broth (or vegetable broth or even just water) to cook the quinoa and it doesn't change the flavor. 2 cloves of garlic is plenty, 2 eggs and I don't bother with the onion or cilantro. Have yet to try the peanut oil or chili oil, I just use 2 TBSP EVOO and then add chili powder. Also, I only use 2 TBSP of low sodium soy sauce. I prepare it on Sunday night to have for lunch during the week. I usually just eat it cold. So yummy and easy!

Eggplant Bake

So yummy! Took the advice of others and spinkled eggplant slices with salt, let them sit for an hour or so and then rinsed. After frying eggplant I sauted red onions in same pan before layering. Used goat cheese and no tomatoes on "my side" and mozzarella and parmesan on hubby's side. Perfect and even good the next day! UPDATE: trying to eat healthier so made this dish tonight with roasted eggplant instead of fried! Wonderful! After rinsing eggplant I sprayed a pan with Olive Oil Pam and sprinkled eggplant with black pepper and prepared olive oil & pesto (ya know, the stuff you dip your bread in). Baked at 400 for about 30 minutes then follow rest of directions. Still LOVE it with goat cheese!

Sweet Mustard Chicken Bake

This is a good family friendly recipe. I used chicken tenders and baked at 350 for about 30 minutes. Mixed same amount honey and dijon, 1/4 cup butter and pepper to taste. Dipped tenders in mixture then rolled in breadcrumbs. Very good! Thanks for the recipe.

Tantalizing Turkey and Blue Cheese Meatballs

These meatballs were SO good! I made them for a Christmas party and they were a huge hit. The only changes I made was used 2 whole eggs instead of 3 egg whites. I also used waxed paper instead of aluminum foil and they did not stick at all. Making them again tonight for Christmas Eve at my in-laws. yum, yum!

Sugar-Free Peanut Butter Cookies

This recipe was so easy and good! I used reduced fat Jif peanutbutter and softened/melted it in the microwave. I also added a tsp. vanilla flavor as suggested by others. I cooked for more like 10 minutes and then let the pan cool before I tried to remove the cookies. The recipe made exactly 24 cookies just as stated. They were so good and even better the next day and the day after that.
