Cherry Bomb Chicken

I love this chicken!! It is hard to make it any other way now. I usually use jalepenos instead of habanero because I have them on hand.

I thought this was great! I only used what I had on hand, so I ended up using some shredded Mexican cheese which wasn't all white and shredded cheddar. I also didn't have that many chili peppers so used the banana peppers from the farmers market I recently wen to. I doubled the milk and cheese amounts as well as added sausage. Fantastic!

Tofu and Cheese Stuffed Shells

Honestly, very bland. Needs more spices and I think this would be good. The texture of the tofu if you blend it really good fits right in and you'll never know its there. The tofu really needs a lot of seasoning though so don't be scared of the spices & herbs.

Holiday Pumpkin Cake with Rum-Cream Cheese Glaze

Do not try to take out of the pan too early. Let it cool! I was rushing and tried to get it out and it all fell apart. It tasted great though!

Savory Filled Cottage Cheese Pancakes

Took some convincing of my husband to try this, but I thought it turned out great. I didn't want to buy the bacon or feta for this so I substituted other meat/cheese I had. Next time I think I'll saute the spinach for a couple seconds before adding. I think this recipe is very customizable with different meats, cheeses and vegetables. Very good!

my husbands grandmother used to make these under a different name for him all the time. I was very excited when I found the recipe, I used some of the other reviewers suggestions - they came out fluffy but flattened a bit once out of the pan. they still tasted great and my husband was so happy!

Chorizo and Lentil Stew

I identified this as an Indian inspried dish right away and I have been so excited to try it! I found it when trying to find a dish to make with Chorizo after I found a veggie soy version of the sause and wanted to try it. I added some potatoes, onions and peas in place of the celery and served with some warm Naan. I also think cauliflower would work really well here too. There is a lot of room for experimentation and variety. Next time I will make some rice to serve over, this dish is amazing and it going to become a staple in my house.

Queso Dip

Pumpkin Roll with Crunchy Peanut Butter Cream

I thought this was really good. The mixture of peanut butter and cream cheese was different. I was amazed how easy it was to roll, unroll and then add the filling and re-roll. It didn't fall apart at all!
