Cranberry Upside-Down Coffee Cake

Reviewed: Aug. 17, 2008
I made this recipe twice this week and it was a big hit with our friends both time. It's so easy and turns out like a gourmet bake shop cake. It took exactly an hour . Its important to wrap the pan in tin foil ..it will save a messy clean up. I used strawberries ( frozen ) with walnuts the first time and fresh peaches and walnuts( skins removed ) second time .Both were super. At our dinner party I served the cake with a drizzle of Idobo Natural African cream Liqueur . I think any kind of cream liqueur would be great!!

Banana Crumb Muffins

These were great, my son and daughter thought they were the best. The topping turned out chewing as it all melted together and wasn't crumby...I was in a hurry so , I think it was my fault!

French Bread Rolls to Die For

Reviewed: Dec. 25, 2007
I've made these twice and everyone loves them .The only thing I do different is use regular white flour and i increase the salt by a half a teaspoon . Make sure to cook on a high rack in your oven. I use the egg white on top before I bake and it makes them lovely and brown.

Lemon Ginger Shrimp

This was an amazing way to prepare shrimp . Every one loved them . I did them stove top and they still turned out great . I used some of the extra marinade ( boiled) for a dipping sauce . Yumm!

I made followed this recipe for our Christmas dinner. Its great. I even made it the day before Christmas and reheated it in the oven the next day and it was still moist and wonderful . I roasted a 22 lb turkey and it took 5 and a half hours at 325. It made the best gravy too!!

Rosemary-Scented Pork Loin Stuffed With Roasted Garlic, Dried Apricots and Cranberries and Port Wine Pan Sauce

Reviewed: Dec. 18, 2007
I made this recipe on Sat for a dinner party for 8 people. It turned out wonderful. Moist and tender. I had a 5 pound roast and I roasted it for 35 minutes on 250 degrees and I was so worried it wasn't cooking I turned it up to 350 and it reached 150 degrees in another 35 minutes. I took it out and tented it and let it stay in a warming oven while we had our salad .I should have stuck to the plan , I'm sure it would have worked perfectly ...I'll try again when its just family. Anyway it was wonderful and the flavours were perfect!! Even though it had to wait for 30 min on warm it was fine!

Simple Whole Wheat Bread

Reviewed: Dec. 8, 2007
This is fabulous bread . Its the first time I made bread and I'm thrilled with it . I've made it many times since , my family can't get enough of it. The second time I added an extra 1/3 cup of water and I was able to get in all the flour . I substituted 1 cup of oatmeal and 1 cup of whole wheat for the white to make it healthier and it is great. I used the tip one person mentioned and kneaded it in the bowl and let it rise in my oven with the oven light for warmth ...speeds up rising!!
