My favorite family cooking traditions
I come from a varied background - Italian and Slovak on one side, Irish and German on the other. The one thing they all have in common is LOTS OF STARCHES!!! Oh - and alot of sauerkraut! So I've been working on ways to substitute healthier options on the starch category and still indulge in my favorite family/comfort foods. Every year we have The Annual Soup Party at my grandma's - we all bring a crockpot with our favorite soup or stew. Then we eat till we can't stand up straight!

My cooking tragedies
I cannot bake worth a hoot. I'm too lazy to measure, and I like to substitute and add ingredients, so I'm a much better cook than baker! Although one time, I tried to make a this sauasage, onion and apple casserole - I followed the recipe completely... and it was HORRIBLE!!! And I mean BAD, SAD, and PATHETIC. My husband and I were still dating at the time and he insisted on a 2nd helping. I couldn't even choke down the first helping and made myself a sandwich!

Meatball Nirvana
These are the best homemade meatballs I've ever had - and I come from a long background of Italian food snobs! I have made substitutions several times, depending on what I might have available at the time. I've made them with venison, beef, beef/pork combo - and they are all delicious! (I would rec a little pork or heavy cream with the venison to increase the juiciness). My kids will burn their little fingers stealing these off the pan while the meat rests!

Rich and Creamy Potatoes Au Gratin
I made a lower fat version using 1/2 greek yogurt and 1/2 heavy cream with a touch of garlic salt and onion powder. I also LOVE rosemary, and was serving this with roasted hens, so I added fresh rosemary to the recipe which greatly complimented the Gruyere. (not too much though- it's easy to overpower things with rosemary!) Overall a quick, easy, yummy recipe that my whole family enjoyed (the kids asked for seconds!). And I agree with other reviewers - the fresh nutmeg makes a GREAT addition.

Tilapia Scampi
Great recipe idea! I took a few of others suggestions - cut the butter to 1/2 cup, added 1 Tbsp dijon and 2 Tbsp white wine. I also minced the garlic instead of cutting in half (we LOVE garlic) and sprinkled a bit of parmesan on top when it came out of the oven. Added 1 lb of shrimp and cooked at 350 for 20 mins and it was PERFECT. My 2 yr old and 6 yr old ate it so fast I don't think they even took a breath, LOL. Definately a keeper!
