Pumpkin Chocolate Chip Cookies III

These were decent but disappointing after reading the raving praises from other reviewers. I followed the suggestions of 1 tbsp cinnamon and 1 tbsp pumpkin pie spice, and only 1 cup of chocolate chips (which was still almost too much). But the cookies ended up like a kind of dry pumpkin bread. Something needs to be altered to make them moister.

Jewish Apple Cake II

This cake was easy and VERY tasty. I used five smallish apples and if I make it again I'll increase it even more because I like to have apple in every bite. I split the 1 cup of oil into 1/2 oil 1/2 applesauce and the cake was plenty moist. Thanks for a great recipe!

Apple Pumpkin Muffins

I had enough batter to make 12 muffins and a bread, and while the bread came out delicious the muffins were slightly overcooked (they were in the oven about 30 minutes). Making the streusel was kind of annoying and for some reason it didn't melt right on the muffins so the finished product looked dusted with powder. If I make this again I'll add more butter to the streusel and be sure to take the muffins out earlier. I did love the moist pumpkin/chunky apple combo!

No Sugar Apple Pie

To my surprise I didn't miss the sugar at all! The first piece that I cut was a soupy mess but after sitting for almost 24 hours it had thickened up a little. This was quite good considering how few ingredients are required. Thanks to others for suggesting cooking this on top of a cookie sheet, that saved my oven from the sticky pool of juice that leaked everywhere!

Peanut Butter and Banana Smoothie

Amazing!!! This smoothie needs no embellishments, these 4 ingredients make the most decadent-tasting treat. Using a frozen banana makes it frosty and ice cream-like.

Sarah's Applesauce

I didn't know making applesauce was so easy! I've made this twice in the last 3 days because I ate the 1st batch immediately. The second time around I cut back the sugar because it was too sweet initially. I prefer chunky style so I didn't bother mashing the apples up.

Trini Mango Cheesecake

This was delicious! I followed the recipe exactly (it's so simple it would be hard to alter it) and I will definitely make it again. My only issue is there was too much syrup, so next time before adding the chopped mangoes I'll scoop out about 1/3 cup (easier than recalculating the nectar-sugar-cornstarch ratio). It took about 40 minutes in my oven.

Tofu Parmigiana

The end result was very yummy, but because I'm not used to cooking with tofu the preparation took a really long time. After reading other reviews, I wrapped the tofu block in paper towels and put a heavy pot over it for an hour to drain out some water. Then I sliced it and laid it on a cookie sheet and froze. To coat the slices in crumbs, I dredged in flour, then egg, then the crumbs, and I baked this at 350. Were all these extra steps worth it in the end? I'm not sure, but I will say that although this was a very tasty dinner (and it's great cold too), it would NOT fool anyone into believing they were eating meat.

Apple Crisp II

What a delicious apple crisp!! This will definitely be my go-to dessert from now on. When I make it the next time, I only have a few wee changes I'll make: use orange juice instead of water (I used 1/4 cup as per suggestions), and reduce the white sugar (it wasn't too sweet for me but 1 cup seems like a lot and I'm sure I won't notice if there's only 3/4 cup).

Cranberry Orange Cookies

These were yummy and easy to make. I used dried cranberries and only 1.5 cups, I didn't want them to overwhelm every bite. I used the zest of a whole orange plus some extra OJ and it still was a pretty mild orange flavor, but I didn't make the icing and that would have increased the oranginess.

Honey Chicken

I followed this recipe almost exactly and my family thought it turned out great. The only changes I made were adding a few cloves of garlic and using about half the marinade in the baking dish instead of discarding it. It wasn't too sweet, there was a nice blend of orange and curry flavors.

Too Much Chocolate Cake

Oh yum, this was amazing! It does NOT taste like a boxed cake. I used half oil/half applesauce and about 1.5 cups of chocolate chips, 2 seemed excessive. I was going to make the satiny glaze but the cake was so rich and delicious I ended up eating it plain.

Pumpkin Turkey Chili

This was a good chili but I didn't taste the pumpkin at all. Maybe it's just there for the extra nutrients, or maybe I overwhelmed it by adding carrots, an extra can of tomatoes and 2 cans of beans (kidney and garbanzos). I know this is totally changing the recipe but it was too plain before. I think cumin is a necessity in chili so I added 2 tbsp, and I garnished with cilantro. I would definitely make this again with all my little changes!

Emerald Green Risotto

I was going to give this 3 stars because it was sooooo bland, but I realized since I gobbled it up it couldn't have been that bad. I think the problem was I used low-sodium Trader Joe's chicken broth, which I recently read scored lowest on a taste test. If I make this again I'll definitely upgrade brands (homemade would be best, but I won't kid myself into thinking that will ever happen). Slight changes I made were grinding in a whole lot of pepper (a failed attempt to inject some flavor), using carrots and doubling the broccoli in lieu of peas and beans, and parm instead of feta.

Key Lime Pie VII

I can't comment on the authenticity of this pie as I've never eaten the true Floridian version, but it was tangy and yummy and so easy. I used regular limes and it only took 6 to reach 3/4 cup, and I used low-fat sour cream in a weak attempt to make this slightly less sinful. It baked for about 12 minutes and came out perfect.

Cajun Baked Catfish

This was surprisingly delicious! I found catfish filets in the freezer that were THREE YEARS OLD so I had pretty low expectations of how this would turn out. The flavor of the spices was amazing, I was eating the piping hot fish right out of the pan. I didn't have garlic salt so I used Old Bay instead, and olive oil instead of canola. Just a warning though, it wasn't that great reheated the next day...but that's possibly due to the expired fish I used. I will definitely try this again with fresh filets!

Orange Salmon with Creole Seasoning

Ok I'm going to be one of those obnoxious people who totally changes a recipe and then rates it...I had a salmon filet and very little time, so I was looking for something fast and with no special ingredients to go buy. I didn't have Creole seasoning and I don't even know what's in that so I used chili pepper, hot curry powder, and Chinese 5 spice powder (very random, I know). Then, what I thought was an orange in the back of the fridge turned out to be a grapefruit! I just used that anyway, although there wasn't enough juice and after a few minutes it was becoming a thick syrup in the pan so I added a little mango nectar, the only juice we had. But despite my complete lack of following the recipe, the salmon was delicious! It just goes to show this is a very flexible recipe, you can use any seasonings and any juice and get great results. I'll definitely try to original version next time though!

Spinach Lentil Soup

This was easy to make and I felt healthy eating it, but it was pretty bland. I added a lot of cumin but I couldn't taste it. Next time I will saute a lot of garlic with the onion and maybe use chicken stock instead of water. I used fresh and frozen spinach and they both work really well in the recipe. It's a good way to use up frozen spinach without going through that annoying step of thawing and squeezing out water; you just throw the icy block in the soup. Next time I'll also chop the carrots, their flavor is kind of lost when they're in tiny shreds.

Jewish Apple Cake I

This cake is so yummy I feel like I could eat half of it in one sitting. I used 5 medium Macintoshes because 3 seemed too measly and it was the perfect amount for 3 layers of alternating batter and apples. I used half applesauce and half oil and I accidentally forgot to add the vanilla, but it still came out beautiful and DELICIOUS!

Superfast Asparagus

I never really liked asparagus but for some reason made this anyway, and it's really yummy! I easily ate it all by myself though, so I definitely disagree that this is supposed to serve 3. I used a sheet of foil so there's basically no clean up. It's cheap and wildly easy so I'll definitely make again.
