Shrimp Scampi Bake

I wasn't able to eat this because I'm allergic to shrimp, but my husband and son said it was absolutely delicious! They told me to give it 5 starts. I halved the recipe because only 2 people were eating it, but it was gone so quick I'll make the full batch next time.

Cheesy Zucchini Casserole II

This was just okay. I didn't like the textures of this dish; too mushy and the crunch didn't work with it. The recipe isn't very precise so I had to guess whether to melt the butter, and which way to slice the zucchini. I ended up following several of the commenters suggestions because they were more specific. I added 4 eggs, and ended up with way too much egg. I was hoping to eat leftovers this week, but I don't think this will make good leftovers.

Mom's Ginger Snaps

I've made this recipe as is 3 times now and they always come out too crunchy. After a day they're too hard. I've tried baking them for less time, but it doesn't help much. I'm still looking for a great recipe and this isn't it.

The Best Ever Chicken Nuggets

I had thawed chicken breast for dinner, but my family said they just wanted a snack. I decided to try these, and they were perfect. Since there are only 3 of us, I did 2 breasts and used 1/4 of each of the ingredients. I ended up needing two eggs, but otherwise the proportions were just fine.

Honey Barbecue Sauce

This sauce is such a big hit at my house. It's one of those great recipes that you can have fun experimenting with to get exactly the flavor you want. I think the molasses makes this recipe, so I left it in. I didn't use meat tenderizer or seasoned salts, but instead upped the amount of salt, pepper and oregano. I also like to add a couple of splashes of liquid smoke. I've already used it twice in two weeks on oven baked chicken, and got rave reviews.

Peanut Butter Balls VIII

These are the perfect snack for kids who don't have nut allergies. My mom made them as a kid, and I've been making them for several years. I have always used coconut instead of bran cereal, and rolled them in sesame seeds for some crunch. This time I did half coconut and half Fiber One cereal. I really liked the crunch, although I think next time I'll break the cereal down a little so it spreads through the dough better. I love adding that extra fiber to my son's favorite snack. Also, I like to refrigerate the dough for 1/2 hour before I make the balls so it's not so sticky.

Baked Bar-be-Que Chicken

I've been trying to come up with nutritious ideas for my 1st grader's lunch. I saw this recipe and decided to try it. I cooked 4 drumsticks and used the same cooking times and just eye-balled the sauce. They came out delicious! I'm going to get a whole chicken and make it for dinner later this week.

Baked Salmon II

This was amazing! it was so easy, and I was able to use ingredients I already had in the house. The flavor was so good! We've always grilled salmon, and I was afraid to try baking it. But this was just as good if not better. I used the recipe exactly as is except I didn't have fresh parsley to sprinkle on top. I bought a bag of Kirkland brand sockey salmon filets at Costco, so this will definitely be a regular addition to our dinner plans.

Chicken Gravy

Like other reviewers I used boullion cubes and boiling water since I didn't have chicken stock, and I mixed the corn starch with milk instead of water. I'm not sure why, but when I added the cornstarch mixture to the water, it instantly clumped up, and no amount of stirring would fix it. I thought it was ruined. But I strained it and served it and it was delicious. My husband mentioned it was a bit runny, but he liked the flavor. I prefer making gravy with the pan drippings, but this was a good substitue since i was using a pre-roasted chicken and didn't have any.

It's Chili by George!!

I made this for a super bowl party, and everyone loved it. But the recipe on its own was kind of bland. I ended up adding a lot more cumin, oregano and pepper than called for to perk it up. I also used stewed chili tomatoes and diced chili tomatoes in place of most of the tomato juice for a litle added flavor.

Winter Chicken Bake

This dish was just okay to me. The cranberries made it too tart, with nothing to balance it out. If I was going to try this again (I don't plan to), I think I'd add more apples and fewer cranberries. I didn't think the onion did anything for it either.

Luscious Chicken Pot Pie

This was so delicious. My husband said it was every bit as good as Marie Calendars' pot pie, and that's a huge compliment from him. I used the cheapie frozen chicken breasts, but I rubbed them with olive oil, sage, kosher salt and pepper and roasted them. They added a lot of flavor to the pie. This will definitely become a family favorite.

Jiffy Casserole

This casserole is really good, especially on a cold winter night. I liked it even better heated up the next day for lunch. Mine turned out a bit bland, so I melted a layer of shredded cheddar cheese over the top after it was done. Next time I'll add a lot more pepper and season it up a little bit. I gave it 4 stars, because this recipe takes quite a while to make with all the chopping and the 1 hour cook time. I'm not sure why it's called Jiffy casserole because it was anything but quick.

Cherry-Pistachio Bark

This bark was so good! I took it to a party this week and gave it to friends for Christmas. Everyone loved it. The only thing I'll do different next time is find pre-shelled pistachios. Shelling and peeling the pistachios took way too much time.

BUSH'S® 7 - Layer Dip

This dip was pretty good, but it didn't stand out to me. It was also a little watery the first day, and even worse the next day. I used fresh salsa from the deli, so maybe that's why. If I make this again, I'll drain the salsa well before using it, and cut back a little on the taco seasoning.
