Too Much Chocolate Cake

Awesome, fool-proof recipe!! I've substituted the sour cream for vanilla non-fat yogurt and oil for unsweetened applesauce for a lower calorie version and it still tasted absolutely fantastic!

African Sweet Potato and Peanut Soup

This soup is wonderful if you wait a day before having so the flavors have some time to come together. I make over the weekend and have for lunch at work and it saves wonderfully.

Vegan Chocolate Cake

First, it is quite easy to get 'vegan' white sugar from a natural foods store or a place like Whole Foods/Wild Oats. It is even labeled vegan, so no worries about that. Second, this is great with chocolate chips as the author suggests. It is ALWAYS best to work with a recipe that is originally rather than adapting a recipe to begin vegan . . . this is a great, simple base recipe!

Nana Dot's Irish Soda Bread

Best soda bread recipe I've made from this site. Saves really well as long as you have it covered. Toasts wonderfully. As far as traditional goes, because this recipe is one of the only ones to not have eggs in it, it is a bit closer to 'traditional' Irish Soda bread (which is just buttermilk, flour, soda, and salt). If you ask me, this variation is much more flavorful, but a lot closer to the right texture. As far as dried fruit goes, I had a neighbor who immigrated from Ireland who made soda bread with currants in it all the time.

Amazing Simple Thai Tofu

A good base recipe. I've tweaked after several attempts and am very happy with the results. First, thai chili sauce really works well with the flavors already in the recipe and makes everything "pop". I dabble on to taste since some of the chili sauce can get quite spicy. Next, I like to add carrots based on a suggestion by another viewer, it varies the texture nicely. I like to up the fresh cilantro to play of the spice from the chili sauce. Finally, if there is anything you can omit, it's the coconut flakes. While I don't mind them, they don't really add much flavor or texture to the dish (unless you really love coconut).
