Hot Chili Cheese Dip

Yum! That was the concensus of my book club who gobbled this up. I used Turkey chili and less fat cream chesse to make it lighter. Unfortunately, I was out of onions, so tried to make it without, but without the onions it was very runny. After adding the onion sauteed with paprika and cumin, I couldn't keep my kids and husband away from it!

Beef Nacho Casserole

Yummy! I made some last minute changes because while I was making it I found out I was having extra people for dinner! I doubled everything, but was out of ground beef. I thawed some pulled pork and added it. I also added 1 cup of black beans and topped it with olives. The casserole was almost gone in a matter of minutes!

Slow Cooker Beef Stroganoff I

This recipe was sooooo easy. I used leftover primerib from Christmas and only cooked it for 4 hours. I also used all the suggestions on the sauce and adding mushrooms and spices. I didn't have 2 cans of Golden Mushroom soup, so used an entire envelope of onion munshroom soup mix and a little extra water. Rave reviews from kids and neighbors alike.

Brisket with BBQ Sauce

I had the most wonderful brisket at a charity event several years ago and have tried numerous recipes since. This recipe is so delicious and tender and tastes even better than the catered barbecue brisket. YUM!

Italian Sausage Soup with Tortellini

Yummy! All 4 of my kids enjoyed it. Good, hearty soul food. I think I'll try to lighten the calories though with Turkey Sausage next time. It did need more water than called for.

Shrimp Chowder

There is not alot of flavor in this soup. I made it according to the directions, then added everything that others had recommended and still wasn't satisfied. Would not make it again.

Peanut Butter Balls III

This recipe is delicous! I tried 3 other horrible peanut butter ball recipes before trying this one. I did cut back on the sugar and used a bit of shortening in the chocolate to make it go further and simplify the dipping. I found the recommended method of using the teaspoon the best dipping method. We will make this a Christmas tradition!
