Chicken Stew With Coconut Milk

This recipe worked out really well. It was really easy. The only thing that took a minute or two was cutting the chicken and potatoes into chunks. I prepared it on my stovetop in an enamel cast iron dutch oven. I added one more potato and a bit more coconut milk and chicken broth to cover it all. It was all done in no time. This just might become a new staple at my house.

Oatmeal Raisin Cookies VII

This recipe was great! It went over well at home. I made this on a Saturday afternoon and am preparing to make it again today (it's only Sunday!). I tried plumping the raisins a bit and I also added some semi-sweet chocolate chunks...DELISH! The only reason I didn't rate it with 5 stars is because it was a little too sweet...next time I'll use a bit less sugar.

Salmon with Lemon and Dill

This recipe was very tasty! Everyone loved it. I took the advice of another reviewer and marinated the salmon in lemon juice for about 30 minutes. My experience with salmon is that the smell can be a bit much. The lemon juice was an excellent marinade.

Addictive Sweet Potato Burritos

I followed this recipe completely - with the exception of using black beans like some of the other reviewers suggested. I didn't care for it much because it turned out a bit bland. Others in my family loved it. It seemed like a good idea. I think it's a matter of personal taste.

Crab Bites

This is a great appetizer! It's a great basic recipe to add and subtract from. Like the other reviewers, the original recipe calls for too much cream cheese. 1-8oz. package is enough. I leave out the dill weed and the parsley. Then I add more garlic, pepper, Jane's Mixed-Up salt or Sazon Completa (Complete Seasoning mft'd by Badia), and to add variety - bacon bits on top. I also pop them into the oven for about 5 minutes...makes it all come together.

Tiramisu Layer Cake

I tried this recipe because I love Tiramisu. This cake is fairly easy and tastes like the real thing. I got complements on the look as well as the taste. The only thing I did differenly was to use marscapone already infused with coffee. It was sold right next to the regular tub of marscapone.
