Cheese Fritters

Made these to go with dinner tonight. I thought it would be a great way to get my kids to try cottage cheese. No can do, they wouldn't eat them! I don't know if they turned out right though. Some were soft but "cooked" inside, some were runny inside. Not sure which texture is correct? I thought they were yummy, but I like cottage cheese anyway. I followed the recipe as posted, except for draining the cottage cheese...I didn't have time to wait, and it didn't seem necessary.

Roxie's Bran Muffins

Tried these today for the first time. I had a box of All-Bran cereal that nobody in the house was eating, so I had to get rid of it! I followed the recipe as is, except I left out the raisins, because we don't care for them in things. I didn't have a banana, so I grated 2 small gala apples. Batter seemed really thick, so I added a small container of vanilla yogurt. They turned out pretty moist. Not sure if the kids will like them, they do have a pretty "strong" bran flavor. I thought of adding chocolate chips, but with just apple, no banana, I wasn't sure it would taste good. I will probably use this recipe again just to use up the rest of the cereal.

Scottish Shortbread IV

I just made this for the first time and it was heavenly! I halved the recipe because I didn't have enough butter for the whole thing on hand, and had a bit of trouble bringing it all together, was kind of crumbly. My son helped me cut it into holiday shapes and decorate them. A second batch was just cut in strips and poked with a fork. They just melt in your mouth! Tastes just like Walkers! My Gran would have loved them.

Creamy Macaroni and Cheese

This is the second time I've made this recipe. This time I made it almost exactly as written, just only used 1 T. dijon, because it's not my favorite (last time i left it out). Turns out it's not that great with the dijon. :( I also made two pounds of elbows, because last time with one was waaay too much sauce. I think it was about the right amount of pasta, but if you're not big on dijon mustard, leave it out completely. I may try with a teaspoon of spicy brown next time. Still rating it 4 stars, but for the version I made tonight, I honestly rate it a 2.

Extra-Yummy Fluffy Pancakes

I made these this morning since I ran out of the Great Value Extra Fluffy pancake mix I usually use. Very easy to mix up! can't believe I spend money on pancake mix! LOL! Anyway, I didn't add quite a whole T. of cinnamon, because I knew my little guy wouldn't like them if they tasted too cinnamony. I let them sit a little more than 5 minutes, but they were too runny. I added a little more flour and they were much better. I will make them again.

Amazing Whole Wheat Pizza Crust

I came here looking for a whole wheat pizza dough recipe that got lots of great, consistant reviews. I found it! :) I didn't have any WW flour on hand, but couldn't wait to try it, so i did, using all AP flour, and honey in place of the sugar. I put it all in the bread machine after mixing the yeast/water. It turned out wonderful! So soft and easy to work with. Rolled out beautifully. I make 4 pizzas out of it. The first was too thin, couldn't really taste the crust it was soo thin. So the others we made a little thicker. YUM! I did as some others did and added italian seasoning to the dough. It is a really tasty dough! I can't wait to try it with whole wheat flour!

Oatmeal Chocolate Chip Cookies I

I followed the recipe exactly, except I 1/2 it and I didn't have baking soda,so I used baking powder (more than I would've soda). They were just OK. I may try them again when I have baking soda in the house.
