Creamy Macaroni and Cheese
This is the second time I've made this recipe. This time I made it almost exactly as written, just only used 1 T. dijon, because it's not my favorite (last time i left it out). Turns out it's not that great with the dijon. :( I also made two pounds of elbows, because last time with one was waaay too much sauce. I think it was about the right amount of pasta, but if you're not big on dijon mustard, leave it out completely. I may try with a teaspoon of spicy brown next time. Still rating it 4 stars, but for the version I made tonight, I honestly rate it a 2.

Extra-Yummy Fluffy Pancakes
I made these this morning since I ran out of the Great Value Extra Fluffy pancake mix I usually use. Very easy to mix up! can't believe I spend money on pancake mix! LOL! Anyway, I didn't add quite a whole T. of cinnamon, because I knew my little guy wouldn't like them if they tasted too cinnamony. I let them sit a little more than 5 minutes, but they were too runny. I added a little more flour and they were much better. I will make them again.

Cheese Fritters
Made these to go with dinner tonight. I thought it would be a great way to get my kids to try cottage cheese. No can do, they wouldn't eat them! I don't know if they turned out right though. Some were soft but "cooked" inside, some were runny inside. Not sure which texture is correct? I thought they were yummy, but I like cottage cheese anyway. I followed the recipe as posted, except for draining the cottage cheese...I didn't have time to wait, and it didn't seem necessary.
