Mini Meatloaves

Loved how easy this was. I was lazy and just put in 2 medium bread pans. Baked for 40 minutes, turned off the oven and went trick or treating. We came home to yummy warm meatloaf that was moist and tasty. I like that it uses oats instead of breadcrumbs.

Japanese Chicken Wings

I opted not to fry per the recipe for calorie saving reasons. I oven fried also and the taste of the sauce was very good if you like a sweet sauce. I know that it would have been extra yummy had I fried it in butter per the recipe, but my conscience wouldn't let me do it.

Luscious Slush Punch

Garbanzo Bean Chocolate Cake (Gluten Free!)

It's hard to believe there's no flour in this cake when you eat it. Delicious and simple. Ibwasnt even looking to make chocolate cake. I had extra vans of garbanzo beans and cane across this recipe when looking for something to use them in. Sweet surprise!

White Bean Chicken Chili

Very tasty recipe. As suggested by other users that couldn't find tomatillos, I also substitued with a jar of Salsa Verde. I just used a 16.75 oz jar. I didn't have fresh corn and used 2 ears of frozen corn. I also used 2 cans of white beans instead of one because I like more beans. I browned ground chicken meat (darK) and used that instead of diced chicken meat. It was awesome. I was afraid that this was not going to have any kick to it, but apparently the jar of medium salsa verde sauce had enough kick to it for the whole chili. It was delicious and easy.

The Best Rolled Sugar Cookies

I love this recipe and make it for almost every occasion. I always split the dough up in 4 to 6 plastic bags before chilling. If I'm in a hurry, I put a couple in the freezer for about 30 minutes. For the longest time, I always used flour to dust the dough and working surface but then recently read reviews where users suggested using powdered sugar instead. This is an awesome tip as your dough doesn't get dried out after reworking the same dough a few times. You'll find that sometimes, you will need to re-chill the dough after you roll out a couple times as the dough becomes hard to work with when it is less cold. This is why it is good to chill in small portions to begin with. The dough is sticky before chilled. Once chilled, it is fine and of course you will need to dust with powder sugar or flour to keep from sticking to your working surface and rolling pin. I've seen some reviews complaining that is bland. In my opinion, I think it's just perfect if you are going to ice or decorate with sugar crystals. The sugar cookie icing recipe on this site goes perfect with this cookie. I tried rolling out directly onto parchment paper and I don't know how other people do it. Mine just slides around every where. I only line the cookie sheet with parchment paper. I always use parchment paper when baking cookies.

My Amish Friend's Caramel Corn

Elegant Orzo with Wilted Spinach and Pine Nuts

I was missing some ingredients (tomatoes and pine nuts) so I added black beans and chopped olives (variety). Delicious and so easy to make. I found that the spinach wilts quickly just tossing in the pan and did not need to cover for 5 minutes.

Chicken Scampi II

This was very easy to make. I love mushrooms and wanted to add a topping on the chicken so I sauteed sliced mushrooms in the pan after removing the chicken and scooped it over the chicken and pasta. This is a great recipe that can easily be cut in half if you're just cooking for two. I especially love that it is very quick to make.

This was delicious, but I would take the advice to cut the peppers by half and let those that eat add more as needed if serving to people with variable tolerances to heat. I could not find fresh herbs when I made this, but it still turned out wonderful with dried herbs.

Apple Pie by Grandma Ople

This is the best apple pie recipe I've ever tried. It is not too sweet and is less messy because the sauce doesn't have to be mixed into the apples. Just pour right on top of the apples in the pie dish! This will definitely be at my Thanksgiving feast! Thanks.
