Easy Oatmeal Muffins

I thought this was a great, basic recipe that can be manipulated endlessly. I personally added flax and chocolate chips for Saturday morning treats- delicious! The texture was nice and tender, and they looked great, too!

Bread Pudding II

Extraordinary comfort food! I used leftover french rolls, and yes, I buttered and added cinnamon/sugar to the bread before cutting, as other reviewers have done. Delicious crunch on the top, creamy and rich in the middle.

Grilled Lemon Chicken

Pretty good- I like dijon, so the heavy dose did not bother me. Do NOT marinade for longer than 30 minutes or so- it will make chicken tough! Reserve a little to pour over the hot grilled chicken.

Carrot Rice

I really liked this rice, it had an interesting flavor. Carmelized the onion well (personal taste), and used more peanuts, but put them on the side in case guests didn't care for them. Cilantro on the side too, just looked prettier to add the garnishes on top.

Best Beef Dip Ever

This meal was simple and delicious, great for busy weeknights. I prepared the jus the night before (didn't take much time, but didn't want to deal with it in the am) and added it to water and meat in the slowcooker in the morning. It cooked for about 10 hours, and was perfectly tender but not mushy. I made the sauce just as described, and it had a rich beef flavor- our guests did not detect soy sauce (in contrast to other reviewers.) Perhaps the extra long cooking time allowed the flavors to develop.

Donut Muffins

I loved these muffins! Very tasty, nice "cake donut" texture and the nutmeg is delicious. I did not use extra butter when rolling these in the sugar, just rolled them while they were still warm and the cinnamon/sugar mixture stuck just fine.

Mock Chicken Fried Steak

This was very tasty! The chili powder added a nice, slightly smoky flavor. I did change the recipe by baking, as others suggested, at 380, instead of frying, to avoid extra oil and a messy stovetop. Genius! This was a real kid pleaser, too.

Buttermilk Chocolate Cake with Fudge Icing

This review is actually for the Fudge Icing only- I made a cake from cake-mix and poured this fudge icing over the top before the cake cooled (this was a great time saver, and ensured that the icing went on smooth and glossy. It was awesome! Tastes so good, and even though a few reviewers complained that the frosting didn't make a lot, it seems you don't need a thick layer of frosting because of the richness/sweetness.

Broiled Tilapia Parmesan

This is tasty, we have made it several times. One caveat- it is a bit on the oily side, so this is one of those recipes that may benefit from using low-fat mayo. Alas, I haven't tried it because I never have low-fat mayo on hand! The dish is tangy and flavorful, and even my toddler like it! I agree with another reviewer that you can take the dish and tweak it with good results- I often add a homemade "lawry's" style seasoning, and this improves the flavor and color.

Italian Spaghetti Sauce with Meatballs

This was ok. I made as directed and added meatballs directly to the sauce to simmer. I think next time I will take an extra step and brown the meatballs, as the sauce was a bit greasy for my taste. I agree that the meatballs could have used more seasoning (some salt would probably do the trick.) The sauce was flavorful and easy, though.

Anniversary Chicken I

Simple and tasty! I have to say, it sounded a little strange, but with all the great reviews, and little more than chicken, ranch and teriyaki in the fridge, I had to give it a try. Glad I did- this was easy to throw together, and my husband and I enjoyed it- the kids thought it was so-so. I did mix the teriyaki and ranch together, as another reviewer recommended.

Absolute Best Pancake Syrup

White Velvet Cutouts

These cookies saved me! I do not consider myself a great baker (and living at very high altitude doesn't help.) I managed to mess up a recipe for snickerdoodles I was making for my son's preschool holiday party, found this recipe, and, I must say, it is FOOLPROOF. Didn't change a thing- they look great (this never happens for me) and taste lovely too. THank you!

Rubber-Ducky Cake

This cake turned out so adorable, and was deceptively simple- I made it for my son's first birthday (he loves ducks) and took the head off so the little one could dig into his "own" cake, while the rest of us ate the body of the cake. I did use a different frosting recipe that I had ingredients for, and dyed it a light yellow- it turned out so cute, and I was so relieved and thrilled at how it turned out. (I am NO martha stewart...)

Oatmeal Whole Wheat Quick Bread

This was very tasty. I substituted molasses as i had run out of honey. Turned out great- crisp on the outside, soft yet dense and chewy on the inside. So easy and quick, I'll definitely make it again.
