Super Simple Salmon

This is great for when you're lazy or in a hurry. Not my favorite way to make salmon, but it's pretty good.

These were pretty good, but definitely needed more flavor in the breading. I would probably double the seasonings used in the breading, maybe even more.

Playgroup Granola Bars

LOVE IT! I have been really burnt out on store bought granola bars for a long time, and I don't know if I'll ever go back. The flavor is so much better, and mine turned out the perfect chewiness. I added all sorts of things: almonds, flax seeds, pecans, chocolate chips, and some other things I can't even remember. Cut the brown sugar to about 1/3c, and used wheat flour instead of white. I also took them out of the oven before they were done and cut them with a buttered knife, then put them back until they were done and then cut them on the same lines again before they cooled. I froze them while they were still a tad warm so they would keep some of the moisture. Ate one today during a hike and I was so pleased.

Sooooo good. A little over a year ago I wouldn't even eat Salmon. Now I love it and this recipe is one of the top ways I've had it.

Triple Berry Crisp

Very delicious. My only negative is that there is a whole lot more of the topping/bottom layer than there is fruit filling. I would suggest using a little more butter in the topping mixture because mine stayed very dry and didn't get crispy. Still tasted great, though.

Balsamic Tortellini

I was a little skeptical with the balsamic, but it was great! I left out the bacon (didn't want to run to the store) and added a tomato, spinach, garlic, and a little dried basil. Perfect! Some people said they thought the 2T of olive oil in the directions was an error and it should be vinegar, so I did 1T of each.

Fresh peach filling was very good. Topping was more like pie to me, that's the first time I've done cobbler topping that wasn't crumbly. I added cinnamon to the topping as well, and also used all shortening instead of shortening/lard mix.

It really is a pretty good summer recipe. I added mushrooms too, and it was great! Also only had dried basil instead of fresh basil, but that didn't seem to make a huge difference.

Easy Pesto

I added a lot more garlic, a bit more olive oil, and a bit more salt and pepper. Put it on some French bread and toasted it. Came out great.

Greek Pasta with Tomatoes and White Beans

This recipe is really good. I did it with bow tie pasta because that is what I had, and added a little bit of garlic. Had French bread on the side smeared with pesto sauce. Great meal!
