Italian Sausage Tortellini Soup

I made this for several adults and it was a huge hit. Changes were small: Spicy sausage (and a lot more than it calls for), thick spiral noodles instead of tortellini because I'm lactose intolerant, and an added jalapeno.

Jalapeno Hot Sauce

We made this with a combination of hot peppers, including three habaneros. My husband loved it - and hopefully the person we're gifting it to will as well! One word of caution - open ALL the doors and windows - and wear a respirator while it's cooking. That's what we had to resort to because we couldn't breath between the coughing and sneezing.

Butternut Squash Soup II

This is a really wonderful and simple recipe! We made it for my in-laws who are not used to eating vegetarian but it went over really well! We added dumplings and had a sweet salad to go along with it. Also used vegetable stock instead of chicken stock. It only took 1/2 the amount of stock, and then after blending we added a little water to thin it out a bit more for the dumplings to soak up.

Pumpkin Tacos

I used a different winter squash in place of pumpkin, but I bet the taste is not far off. The onion and tomato taste fantastic with the squash flavor. Definitely a keeper.

Butter Frosting

Oh yum! I used non-dairy butter and almond milk. It turned out really good. Maybe I didn't have the butter soft enough when I started, but it took awhile and some extra heat to get it to "whip".

Spiced Quinoa

Absolutely love this! I chose to make it into a main dish by stuffing it into pitas with cubed cucumber and homemade hummus. I left out the garbanzo beans since they are already in the hummus. I will definitely do this again!

Black Bean Hummus

Huge hit at the bbq I just made this for! I only had kalamata olives, so I cut it down to 5, which was perfect. All else - perfect. I think I may have added a little extra cumin because I really like the flavor of it. I made homemade pita bread to dip in this, and cut it up into small bite-size pieces - yum!

Chicken Salad Panini

I liked this, but it could definitely use a little more punch. I used jewish rye bread (because it makes such good paninis) and left out the cheese. I think next time I will add more mustard and some additional treats like hot peppers, more apple, and maybe some other veggies.

Lemon Sugar Tea Cookies

Good, but not nearly enough lemon flavor. To make up for this, we made a strong lemon frosting from another lemon cookie recipe I had - and then they were amazingly addictive!

Health Nut Blueberry Muffins

Super moist! I followed some of the recommendations including all whole wheat flour, 1/2c brown sugar in place of white, applesauce in place of oil, and I used almond milk with lemon juice in place of buttermilk. I probably could have reduced the milk a little bit because these are crazy moist, but they baked well.
