Me! - a Self Portrait
About this Cook
I'm 27 and new to this whole cooking thing! I've always been interested, but slightly intimidated. That's all starting to finally change!
My favorite things to cook
Well, I haven't cooked much yet, but so far, it's carrot cake!
My favorite family cooking traditions
One day, I'd love to make "porcupines" because my grandfather used to make them all the time and they were incredible. I also would love to get a hold of my grandmother's red velvet cake recipe and my other grandmother's kolochky recipe. She was Czech, so she was always making delicious polish dishes.
My cooking triumphs
The carrot cake so far!
My cooking tragedies
None that I can think of right now! I did make some red curry thai food that wasn't that wonderful, but it was still edible. :P

Carrot Cake III
I made this cake for a Christmas potluck at work last week and everyone LOVED it! I followed the recipe EXACTLY, but used 2 8inch round pans and a few less pecans. This was the first cake I had ever made from scratch and it was absolutely PERFECT! The frosting was amazing! I had a little bit left over, but nothing crazy. I loved this cake so much that I made this recipe into cupcakes over the weekend! I made 24 of them and had a bit of batter left over, but found out in the end, I could of used all of it. So don't be scared to fill the muffin cups pretty much all the way. They will rise perfectly. I used only half of the frosting recipe this time and it was sufficient. I was told by my boyfriend's cousin that it was the best carrot cake she ever had! I'm looking forward to making this many times, next time trying some of the suggested variations. Either way, I loved it as is! I highly recommend this recipe! YUM!
