I've made as is, and it's fabulous. The second time I left out the cherry tomatoes and instead added small slices of chanterelle mushrooms instead. OMG amazing. Served with ratatouille on top and roasted chicken on the side for us meat-eaters.

Fresh Tomato Basil Sauce

I scale down this recipe and make it very frequently now. When I make this recipe I always increase the basil and garlic. When I use this as a base for other sauces, I add lots of oregano and sometimes some dried basil and a touch of sugar. Fabulous with shrimp. Even better with added eggplant, zucchini, red pepper and chicken!

Absolutely wonderful recipe. I always sub in 2 cups of brown sugar + 1 up white and increase the spices a bit. Always make the full recipe - it never goes to waste!

Chewy Peanut Butter Brownies

My best friend always made these for me with an extra 2/3 up chocolate chips thrown in back when we were in high school. 10 years later we live in different cities and I've taken to making this every couple months. A very good recipe!

I make these - as per recipe - rather frequently. They really do need time in the fridge to hold together while frying. Absolutely delicious with aioli. Served over a baby lettuces, spinach etc. salad for a light dinner.

Simple Whole Wheat Bread

Probably one of the best wheat breads I've ever baked. I cut down on the honey, a fair bit - used just over 1/3 cup total and brushed the crust with a bit of thinned honey just before it was done baking. Dough holds up well to freezing.

Ratatouille

Delicious! I used 1 large eggplant, 3 zucchinis, 1.5 onions, 1 pkg of sliced mushrooms, 1 green pepper, 1 red pepper, 1 yellow pepper, and 1 can of diced roma tomatoes. My zucchini and peppers slices were quite large and took about 1 hour to cook fully. Everything barely fit in a 9x13" baking dish. I covered for most of the baking, and uncovered for last 20 minutes or so to get rid of some liquid. Served with wild mushroom couscous and roasted chicken.

Kheer (Rice Pudding)

I really enjoyed this! The guys, however, did not and I was left to eat the entire pot of kheer. I think they just didn't like the flavour of cardamom (which is too bad, because it's delicious!).

In a word: fabulous. A very forgiving and versatile recipe. I've even used it to stuff small pork roasts along with provolone, red pepper and onion slices etc. Thank you for posting!

Flourless Peanut Butter Cookies

I thought these were the best thing ever until I ran out of peanut butter. I ended up having to use about 2-3 tbs of almond butter to make up the deficit and then threw in a handful of peanut butter chips as well. An amazing soft peanut-almond butter cookie. The guys and I ate the entire tray in 1 night.

Bread Pudding II

Very flexible recipe. I used this as a guide when making bread pudding last night. I used day old baguette ripped into small chunks, reduced the eggs to 3, reduced the sugar to 1 cup, increased the cinnamon and vanilla (easily doubled or tripled it!) and topped with very thin slices of apple. AMAZING.

Banana Cupcakes

I've made this dozens of times (without the frosting) and it's wonderful! I've made a few changes of over time: the recipe scales back to 12 cupcakes well; brown sugar tastes better than white sugar; butter instead of shortening works well; a mix of butter and oil instead of shortening also yields a moist cake; using milk + vinegar works well; using plain milk works well; using almond milk was surprisingly delicious too! A super versatile recipe if you need to play around with it. 5 stars as is AND an extra 5 stars for also being a great base to work with!

Amazingly delicious. Cut the recipe in half, baked in a 9" round pan, covered in chocolate frosting and garnished with strawberries. Very simple, quick, and wonderful. Thank you for posting the recipe!
