Strawberry Jam

Flourless Chocolate Cake I

Decreased sugar to 1/2 cup, used 18 ounces of semi-sweet chocolate chips, and only 5 eggs. I did take some shortcuts. First, I added the chocolate chips to the saucepan of water, sugar, and salt so that it would melt thoroughly with it. I through in all of the butter at one time and stirred a lot until it melted. Removed all of this from low heat, tempered my 5 eggs with a little of the batter thus far and then slowly poured in the egg while my cake beater was on constantly. I used a spring form pan with parchment paper at the bottom and greased entire surface with butter. I did not use a water bath during the baking process. I did get distracted and let the cake cook for 49 minutes rather than 45. Was worried that it would be overdone, but it wasn't! Topped with powdered sugar (that disappeared too quickly) and raspberries with a raspberry-whisky sauce on the side. Highly recommend this cake for all important birthdays, anniversaries, holidays, Tuesdays, Thursdays, and other days that end in the letter "y".

Green Bean and Mushroom Medley

Absolutely delicious side dish. I think my only change was to use black pepper instead of white. Served with a roasted chicken, wild mushroom couscous, and a large glass of wine!

French Baguettes

It's gloomy out and I really wanted to do something other than work. Well, I'm on my third batch of this lovely recipe and it's not even 4:00pm! Chewy insides and perfectly crisp outside. Seriously, just triple the recipe right away because you're going to want more. These were all done by hand and the dough is easy to work with. I've made a few variations - brushed melted margarine instead of an egg wash, spritzed the oven walls once or twice, I added some basil and thyme to one loaf, onions and cheese to another etc. Very versatile recipe and sure to please.

Raspberry Sauce

Used slightly less sugar, maybe 1.5 tbs cornstarch, and 2 tbs whisky (at end of cooking) in place of the orange juice. Followed the rest of the directions and ended up with a LOVELY slightly tart raspberry-whisky sauce (whisky was very mild) that was the perfect compliment to the Flourless Chocolate Cake recipe.

Too Much Chocolate Cake

Dense, chocolaty and delicious. I used a rich chocolate cake mix, chocolate pudding (a larger pkg than called for) and skor mini chips. I baked it in 2 9" pans (there was some spillover) for about 45 min at 350. I covered it with peanut butter frosting.

Banana Cupcakes

I've made this dozens of times (without the frosting) and it's wonderful! I've made a few changes of over time: the recipe scales back to 12 cupcakes well; brown sugar tastes better than white sugar; butter instead of shortening works well; a mix of butter and oil instead of shortening also yields a moist cake; using milk + vinegar works well; using plain milk works well; using almond milk was surprisingly delicious too! A super versatile recipe if you need to play around with it. 5 stars as is AND an extra 5 stars for also being a great base to work with!

Salmon Cakes II

I make these - as per recipe - rather frequently. They really do need time in the fridge to hold together while frying. Absolutely delicious with aioli. Served over a baby lettuces, spinach etc. salad for a light dinner.

Bread Pudding II

Very flexible recipe. I used this as a guide when making bread pudding last night. I used day old baguette ripped into small chunks, reduced the eggs to 3, reduced the sugar to 1 cup, increased the cinnamon and vanilla (easily doubled or tripled it!) and topped with very thin slices of apple. AMAZING.

Winter Squash Rolls

Made the dough as directed with butternut squash. I roasted the squash first rather than boil it to bring out the flavour. That was a lot of dough! Split it into 18 buns of more manageable size. Baked at 375 for 15 minutes and brushed with melted butter and honey just before taking it out of the oven. Ate one almost right away with honey-butter. Absolutely delicious spin on buns! Moist, dense, with a solid crust. Good flavour, you can definitely taste the squash

I've made as is, and it's fabulous. The second time I left out the cherry tomatoes and instead added small slices of chanterelle mushrooms instead. OMG amazing. Served with ratatouille on top and roasted chicken on the side for us meat-eaters.

Simple Whole Wheat Bread

Probably one of the best wheat breads I've ever baked. I cut down on the honey, a fair bit - used just over 1/3 cup total and brushed the crust with a bit of thinned honey just before it was done baking. Dough holds up well to freezing.

Mushroom Pork Chops

Pretty good with mashed potatoes! Definitely use fresh garlic instead of garlic-salt though - makes a huge difference in flavour. I have seared and baked this instead of finishing in a skillet, and it's great! Very tender :)
